This simple cocktail hails from the Basque Country, hence the crazy spelling. In the rest of Spain it’s known as the Calimocho or the Kalimocho. It’s often made right in a Coke bottle that’s half filled with cola—simply replace the missing soda with red wine.

INGREDIENTS
  • Red wine
  • Cola, such as Coca-Cola
INSTRUCTIONS
Combine equal parts red wine and cola. Mix gently and serve at room temperature, or chilled.

  • at SF's Bocadillo's it's served with a garnish of orange slice, and the fruit juice is a great addition; instant sangria

  • I was given this drink as a child at family seders. Probably it was more cola than wine, but I remember liking it a lot. I wonder if the recipe is better with certain types of red?
