Le Petit Hibou Recipe
While dining at the Little Owl, a fantastic shoebox of a restaurant in Manhattan’s West Village, former CHOW food editor Regan Burns was smitten by this drink. It’s subtle enough to enjoy with food and low enough in alcohol to order another, and another. The Little Owl was kind enough to part with the recipe.
- 2 ounces Pinot Blanc or New Zealand Sauvignon Blanc
- 2 ounces Lillet Blanc
- 2 ounces apple juice
- Ice

This was lovely. It would make a great summer cocktail. If you're only drinking one owl, the correct spelling of the name is "Le petit hibou". "Hiboux" is the plural.
I'm impressed w/ the lessons learned here.....cocktails and a quick lesson in French language!!!!
PS.....I've been drinking Lillet for years. Love it. Always straight, on the rocks; however, I may have to try this recipe this weekend.

Just to let you know, it should be Le Petit Hibou, not HibouX. "Le" is singular, whereas the X indicates plural. I know, french is complicated.

Hooray for Lillet! I'm glad to find a another drink in which to feature my wonderful Lillet Blanc. For trivia (and another great cocktail) watch or read Casino Royale--this is what James Bond orders in his Vesper martini. (gin, lilet, vodka, orange twist) I eliminate the vodka, but Lillet has permanently taken the place of vermouth in any cocktail I make.
I made it - but I didn't have apple juice and was feeling lazy, so I made it with cranberry juice. It was good! Nothing fancy, but definitely refreshing. Good for when you want a cocktail but don't want to get too wasted.

strephking: Lillet is a French aperitif that is a mix of fruit brandy and wine. In this recipe, we use the white version, which is lighter than the red version, called Lillet Rouge. It is available at most high-end grocery stores and liquor stores. If you can't find it, you can substitute vermouth though that will lend a sharper, less fruity note to the drink.
i have never heard of Lillet. i looked it up and know what it is now; however, is it really easy to find? if not, is there a substitute?

I don't have Lillet at home, so maybe I will try this at Little Owl before buying the ingredients.
Addict, we tested the recipe using Martinelli's apple juice, which is clear. I think any apple juice will work, but a heavier, cider-style variety might overwhelm the other flavors in the drink. Let us know how it turns out!
