Meatball Sub Recipe
The meatball sub is the ultimate deli hoagie, and every ingredient is important to its success. Here we combine a good-quality roll with our Italian Meatballs and some fresh mozzarella for an over-the-top sub.
Game plan: This is a great way to use up leftover Italian meatballs, but no one says you can’t make the meatballs solely for multiple rounds of sub consumption.
Hoagie rolls can be found in most grocery stores, but you can also substitute ciabatta or sourdough rolls.
For a slacker solution, use store-bought meatballs and mozzarella and cook this in a toaster oven.
- 3 Italian Meatballs
- 1/4 cup Basic Tomato Sauce
- 1 hoagie roll, about 6 inches long
- 2 ounces fresh mozzarella, thinly sliced
- Heat the broiler to low and arrange the rack in the middle of the oven. Warm up the meatballs in the sauce in a covered microwaveable bowl or on the stovetop.
- Cut a 1-inch V-shaped notch out of the top of the hoagie roll and discard. Remove some of the roll’s interior to form a pocket so the meatballs can fit easily.
- Arrange the meatballs in the roll, cover with sauce, top with mozzarella, and put on a foil-lined baking sheet.
- Place under the heated broiler until cheese is melty and golden and bread is toasty around the edges, about 3 to 4 minutes.
Beverage pairing: Mirassou Pinot Noir, California. Bright red berry fruit and a refreshing verve are called for to wash down the meatballs. Keep things simple with an inexpensive Pinot Noir, and serve it slightly chilled.

A lot of the commentors just don't get the fact that a meatball sandwich can only hold so much.. olive oil? The roll would be a sodden mess. You're free to jazz up a jarred sauce, or make your own w/veggies and spices, and be creative if you make your meatballs from scratch, but a good meatball sandwich, w/cheese or w/out is a simple thing, and should remain that way.
This is such a shame. Such a simple recipe with a lot of room for error, but Kate seems to have missed the mark here.
I personally like my meatball parm sandwich simple:
slice the roll most of the way (none of that notch stuff is necessary)
if anything, take out a little of the inside of the hoagie
a small layer of sauce (surprised nobody complained about using the word gravy)
then place the meatballs that have been soaking in sauce
top with mozzarella - the wonderful shredded, processed kind
broil
just make sure the sauce is flavorful and the meatballs are moist
OMG, maybe she doesn't like onions or pepper or hot pepper...etc. it's on there? Maybe she can only eat bland things due to medical reasons. OR just maybe, its her recipe! If you don't think it sounds good, or sounds "too bland" etc..don't make it. Simple right? LOL
Wouldn't the master of the meatball sub use a peperaccini to cut the rich instead of a sour apple? I've never been to Italy so I'm just askin.
I'm the master of the meaball sub. Beef, pork and italian sausage go into my meatballs. I smoke the meatballs over wood, then simmer them gently into a heavy tomato sauce with lotsa onions and peppers and some cayenne. Then i layer on some fresh basil and top with cheese. A real party pleaser. It is so rich that i serve with sliced sour apple on the side.
olive oil! salt! garlic! few sliced sundried tomatos?
Along with hot peppers, red onions...
A place back in upstate NY used to add capicola as well, sliced. It was naughty
A recipe doesn't tie your hands to specific ingredients or cooking processes. Recipes are simply "ideas" that you the cook may change at will and make any "dish" your own.
A marinara would be quite wonderful in this recipe.
That basic sauce does sound a little bland; using tarter tomatoes could help, as could some spices. And save the innards of the roll for breadcrumbs, don't discard them.
This sounds a little bland to me... aren't meatball subs usually made with a more flavourful sauce, like marinara? How about throwing some red onions on top along with some fresh black pepper? I got very excited when I saw this in my sidebar, but now having read the recipe, my enthusiasm has waned.
