Deviled Eggs with Tarragon Recipe
Hard-boiled egg yolks are mashed with Dijon mustard, tarragon, mayonnaise, and capers, then scooped into the hard-boiled egg whites, for a tangy, herbal riff on deviled eggs.

- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon minced capers
- 1 1/2 teaspoons minced fresh tarragon leaves
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons minced fresh chives, for garnish
- Place the eggs in a medium saucepan in a single layer and add enough cold water to cover by 1 inch. Bring to a boil over medium-high heat, then remove from the heat and let sit in the hot water for 12 minutes. Drain the eggs and run them under cold water until they’re cool enough to handle. Transfer them to the refrigerator for 20 minutes or until completely cool.
- Crack and peel each hard-boiled egg. Using a sharp knife, slice the eggs in half lengthwise. Scoop out the yolks and place them in a medium mixing bowl; reserve the empty egg-white halves on a serving tray.
- Mash the yolks with a fork and add the mayonnaise, mustard, capers, and tarragon. Mix thoroughly with the fork until smooth. Season with salt and pepper.
- Fill each egg-white half with 1 heaping teaspoon of the yolk mixture, rounding the tops with a spoon. Garnish each with a sprinkling of the minced chives and serve.
I made the Chow recipe here, and it was excellent. These are very elegant and delicious deviled eggs that disappeared very quickly from my tea party spread.
20 hard boiled eggs
-1/2 to 1 cup mayo -to taste
-1/4 cup Dijon mustard
-2 heads roasted garlic and 1 clove fresh minced very fine (to taste)
-12 small sweet gherkins chopped fine and aprox 1/2 cup of pickling vinegar (from the jar)
-8-10 cocktail olives or kalamata chopped very fine
- red onion minced very fine (marinate a tbl spoon of seasoned rice wine vinegar or vinegar and sugar for a few minutes to take the edge off).
-Salt & Pepper
- 1 tablespoon of horseradish (or less to taste)
- Wisheshire sauce to taste
- tabasco 1- tablespoon to taste.
- The key's are the 1)roasted garlic 2)the sweet pickel juice from the jar.. everything else is just to taste.
Makes 40 deviled eggs

The deviled eggs I made with this recipe disappeared in no time at all! They are absolutely delicious!!! How can you use Miracle Whip in any recipe!

I totally agree with Melanie Wong. If I were to use my freshly laid eggs, like this morning's, I would be unable to peel them. Best to use older eggs. I would also reduce the time from 9 to 7 minutes. Aside from that, great recipe.

Alrighty then :) Here it goes....
(keep in mind you might have to make them a couple times in order to suit them to your taste) ;)
I'm about to make some right now as we speak- so it's really ironic...
Ingredients:
one dozen eggs
Miracle whip salad dressing- (NOT hellman's)
apple cidar vinegar
tabasco sauce
sugar
Hungarian Paprika-regular-sweet
-Boil eggs as usual - do not overboil- egg yolks need to be nice and yellow
-cool and peel eggs
-cut length-wise and scoop out yolks - place yolks in bowl. -Place whites on a serving platter
-mix yolks very- very finely and add enough mayo so that it is nice and creamy- (to taste)
add one to two drops of tabasco sauce- (start with one-then add if needed)
mix and add the apple-cidar vinegar (less than 1/4 capful)
* I use much less- "just a taste"- just a couple drops..
add 1-2 teaspoons of sugar- (I like mine sweet) start with 1 and go from there :)
Mix everything together and place into egg whites
sprinkle with Hungarian Paprika - (do not use regular- it won't come out the same)
chill and enjoy !
They have a very addictive flavor and are soo good !!

Bland and greasy. Made these for a bridge party for an elderly friend, and all the ladies asked what happened to the spicy curried ones I usually make.
Very fresh eggs are notoriously hard to peel, best to use eggs that are a week or so old.
Huge hit with everyone who has tried them. Made these twice, and found them MUCH better without any salt added.
