Mer's Pimm's Cup Recipe

This variation of a classic Pimm’s is preferred by CHOW editor Meredith Arthur—spiked with a little extra gin and garnished with an orange slice rather than lemon.

INGREDIENTS
  • 2 ounces Pimm’s No. 1
  • 1 ounce Hendrick’s gin
  • Sprite or 7UP
  • Orange slice
  • Cucumber slice
INSTRUCTIONS
  1. Pour Pimm’s and gin over a tall glass of ice. Top with Sprite and garnish with orange and cucumber slices.

  • Agreed on the ginger beer. We've been using canned Barritts, which has wonderful ginger taste that doesn't overpower the Pimm's.

  • Sprite and 7UP are not really interchangeable. Sprite is sickeningly sweet; 7UP much less so. I'd experiment to see your level of high fructose corn syrup tolerance before potentially wasting Pimms on something that might taste like candy corn.

  • Mine is made with ginger beer instead of the lemon/lime soda for an added kick. I also garnish with mint!
