Lavender-Thyme Syrup Recipe

This is an intensely herbal syrup that is not for infusion wimps. Its floral notes work great mixed with gin, vodka, or even bourbon.
INGREDIENTS
- 2 cups granulated sugar
- 1 cup water
- 8 sprigs fresh thyme
- 2 teaspoons dried lavender
INSTRUCTIONS
- Combine all the ingredients in a small saucepan and stir to mix. Bring to a boil over medium-high heat.
- Once the mixture boils, reduce the heat to medium and simmer until the mixture is slightly thickened, about 5 minutes.
- Remove from the heat and let steep 15 to 20 minutes. Strain the syrup to remove the herbs, and transfer to a container with a tight-fitting lid. Cover and refrigerate the syrup until ready to use.
