	<li>Combine all ingredients except the olive oil in a large bowl; form into 4-ounce cakes (about 3 inches in diameter) and set aside. </li>
		<li>Heat oil over medium-high heat in a nonstick frying pan until hot, about 2 minutes.</li>
		<li>Place several potato cakes in the pan and let sit undisturbed for 3 minutes, or until they are nicely browned. Gently turn cakes over and cook 3 minutes more on the other side. Drain on a paper towel, season with salt, and repeat with remaining cakes.</li>
