White Chocolate–Cranberry Bark

Bark is one of the easiest confections to whip up, so this no-fuss recipe is ideal for cramped holiday schedules. Normally uninteresting, good-quality white chocolate is dressed up by dried cranberries and candied orange zest.

What to buy: These white chocolate wafers taste great.

Candied orange peel can be found at most specialty grocery stores.

INGREDIENTS
  • 6 ounces white chocolate, such as Schokinag wafers
  • 1/2 cup dried sweetened cranberries, coarsely chopped
  • 2 tablespoons candied orange peel, finely chopped
INSTRUCTIONS
  1. Line a baking sheet with parchment or waxed paper, or use a silicone baking sheet, and set aside.
  2. Melt white chocolate in a small saucepan over low heat, stirring occasionally, until smooth. Remove from heat and stir in 1/4 cup of the cranberries and 1 tablespoon of the candied orange peel.
  3. Pour chocolate mixture onto the lined baking sheet and spread very thinly into a roughly 12-by-10-inch rectangle. Sprinkle remaining cranberries and orange peel over top. Let set in a cool, dry location. Once bark is hard, break up into shards.

  • Chocolate and moisture are not good together. It will seize the chocolate, which is why dry ingredients only should be used (ie., not fresh berriesp, only dried). You will have much better results if you use dried cranberries.

  • I just made this with fresh cranberries and German sweet chocolate. Good white chocolate is not to be found where I Iive.

    I put three cups of washed, fresh cranberries on a cookie sheet lined with parchment paper. Then melted four ounces of chocolate and poured it over the cranberries.

    Four ounces was not enough! It covered only about twenty per cent of the cranberries. The taste of the chocolate was good with the cranberries, but I wasn't happy with the cranberries themselves. This is late in the season, so maybe they weren't at their best.

    It's not that I don't like cranberries; I just bought seventeen packages to add to a shelf-ful in the freezer. lol

    I would like to try it again. Think the candied orange peel sounds delicious.

    I wonder why the four ounces of chocolate didn't go very far.

  • Here is another variation....how about using the Nestle's White Chocolate chips...either the plain or the holiday swirls?
    Also with the dried cranberries, almonds and maybe throw in some shredded coconut...Just a thought...

  • My sister makes it with white chocolate, cranberries and pistachio nuts. Just another variation that is very tasty!

  • I would think that if you use fresh that the juice would leak out into the chocolate causing a bit of a mess. That's just a guess though.

    * 1/2 cup walnuts
    * 16 ounces very good white chocolate, finely chopped
    * 1/4 cup dried cranberries
    * 1/4 cup medium-diced apricots

  • I loathe white chocolate, but I'm inspired by the recipe. I'm thinking dark chocolate, candied ginger and candied orange.

  • tennishgal1206: we haven't tried it, but it might be nice. i'd rec using a little less as candied citron can be a bit strong. let us know how it turns out!

  • Can I substitute candied citron instead of candied orange peel?
