Eggnog French Toast

This French toast, soaked with our homemade eggnog, adds a bit of the holidays to breakfast.

INGREDIENTS
  • 1 1/2 cups Best Eggnog
  • 4 large eggs
  • 8 teaspoons vegetable oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly ground nutmeg
  • 12 slices (about 1 pound) French bread, about 1 inch thick
INSTRUCTIONS
  1. Heat the oven to 200°F and arrange a rack in the middle. Place a baking sheet in the oven.
  2. In a large shallow dish, combine eggnog, milk, eggs, cinnamon, nutmeg, and whisk until blended.
  3. Heat 2 teaspoons oil in a large cast iron or nonstick frying pan over medium heat, about 3 minutes.
  4. Soak 3 slices of bread in the eggnog mixture, about 10 seconds per side. Lay soaked bread in a single layer in pan and cook until browned on 1 side, about 2 to 3 minutes.
  5. Flip and cook second side until browned, about another 2 minutes. Place cooked French toast on heated baking sheet. #Repeat with the remaining bread slices.

I'm going to try this recipe!

I have been trying to perfect French Toast, and I have found that by cutting the bread the night before, then leaving it out to "stale" helps to absorb the batter, and cooking yields a great crust with a custardy filling. Mmmmmmmmmm!
