Smoked Duck Pizza with Hoisin Recipe
Keep these ingredients in your pantry and you’ll be ready to whip up a quick hors d’oeuvre or light meal in no time.
What to buy: Look for smoked duck breast in gourmet grocery stores, at your butcher, or online at D’Artagnan. If you have a hard time finding smoked duck, you can substitute cooked bacon, prosciutto, speck, or even smoked salmon.
- 1 (11-inch) premade pizza crust or flatbread, such as Boboli, baked and cooled
- 1/4 cup hoisin sauce
- 1/2 medium red onion, halved and sliced paper thin
- 1/4 pound smoked duck breast, thinly sliced
- 3 ounces shredded Monterey Jack cheese (about 1 cup)
- 2 tablespoons coarsely chopped fresh cilantro leaves
- Red pepper flakes (optional)
- Line the bottom of the oven with aluminum foil and heat to 450°F.
- Brush pizza crust with hoisin sauce and top with red onion. Arrange smoked duck breast in a circle and top with cheese.
- Place pizza directly on the oven rack and bake until golden and crisp, about 5 to 7 minutes. Top with cilantro and red pepper flakes (if using), cut into small squares (if serving as an hors d’oeuvre), and serve.
Beverage pairing: Adelsheim Pinot Gris, Oregon. Smoked duck and hoisin might typically have paired with a round, perhaps slightly woody Pinot Noir, but the addition of cilantro pushes the pairing to a white wine with some green, herbal flavors. Pinot Gris fits the bill, and in Oregon they make a delicious, sometimes lush style that can often drink a bit like a red wine, making it a nice choice for this rich, brightly flavored dish.

Naan bread is awesome for this type of pizza. I get the garlic flavored one from Target and put tomatoes, basil, freshly shredded Mozzarella (or smoked mozzarella) and it's delicious!
Boboli crust with smoked duck? No way.
Try this dough recipe... it's based on a ciabatta bread - it's a very high hydration (about 94%) which gives you huge air bubbles and its nice and light and crisp... perfect.

This looks great. I'm not sure where to get smoked duck in Detroit but I smoke my own chicken often enough.
Skip the pizza dough and use Naan. So. Good.
Too bad you aren't near an Asian restaurant which has freshly roasted, crispy duck. Mmm, that'd be great in this recipe.
I think I would be more likely to sub smoked chicken or smoked turkey first.
I think if one did use those smoked duck substitutions, like prosciutto or smoked salmon, maybe hoisen sauce wouldn't be your first choice as a sauce/flavor element...I think that would be totally nasty...Would you think that's nasty or what?
I ate duck in a London restaurant when I was still eating animal products.. it was the most luscious meat I have ever tasted and this picture made me miss it.
GREAT recipe. I used more hoisin and cheese and I used freshly chopped chives instead of cilantro and it came out wonderful.
Also, instead of using a premade crust I recommend going to Trader Joe's and buying a couple bags of their pizza dough and making it yourself.
I tried making a pizza like this. It was mostly inspired by this recipe, but with a few added things. I used unbaked dough, marinated/grilled duck thigh, and added some sweet chili sauce. It was quite good, just make sure not to use too much sauce, because it tends to overpower the other flavours and make the pizza too sloppy.
The Little Szechuan Express tucked back in a corner of the Ranch 99 Market Shopping Center (not IN the Market) at the Northeast corner of Fremont Blvd. and Paseo Padre Parkway in Fremont, CA sells the king-god smoked duck. And it's only like $7 for a whole half a duck. Mmmmmm!
