INGREDIENTS
  • 1 1/2 cups heavy cream
  • 1/2 cup finely chopped yellow onion
  • 3 pounds baby spinach, washed
  • Kosher salt
  • Cayenne pepper
INSTRUCTIONS
  1. Combine the cream and onion in a small saucepan over medium heat and bring to a simmer. Let cook until the cream has thickened and reduced by half, and the onion is soft, about 10 minutes.
  2. Heat a large pot or Dutch oven over medium heat and add about a quarter of the spinach to the dry pot. Cook, stirring occasionally, until wilted. Add more spinach to the pot and repeat until all of the spinach is wilted.
  3. Set a strainer in the sink and transfer the spinach to the strainer. Drain off the excess liquid and return the spinach to the pot. Add the reduced cream mixture, season well with salt and cayenne pepper, and stir to combine. Serve immediately.

  • I just love creamed spinach - but would rather have a recipe that would be calorie and heart friendly. Perhaps with some kind of ricotta and cream cheese mixture. I would like the spiced up version with some hot peppers. That Sounds yummy. -- Any help would be appreciated with a recipe.

  • RWIG2, i think u just dont like spicach. I LOVE SPINACH (my papa used to call me Popeye), and my fav way to eat it it just steamed with a lil buttter n salt. also, Wilted Salad: fry up some bacon, remove th bacon and drain half the grease from the pan. put the FRESH spinach greens in the pan with the rest of the grease, and toss till just starteing to wilt. add crumbled bacon slices, a can of drained garbanzo beans, and drizzle with blasamic vinegar to taste!!! FREAKIN AWESOME!!!! SPINACH ROCKSSS!!!

  • I think I have the perfect creamed spinach receipe and it isn't watery. Made by my mother in law and recreated by me.

  • Why does spinach have that dry taste raw or cooked? Am I doing something wrong? I made some by steaming it in a pot, a dash of salt,pepper,shredded colby jack while simmering,and mozerrella cheese.mozzerella after being drained. It was off the hook good and good enough to ignore the dryness of the vegetable?

  • Change the onions to shallots. Yes to parm and gruyere.

  • I wasn't impressed with this recipe. I made it to go along with a Sunday meal, and I was almost embarrassed to serve it to my boyfriend. It needs more thickening agents, as it turned out very watery.

  • I hate when recipes serve 10-12. Who has 10-12 people eating together more than once a year?

  • I actually like it this same simple way with green onions instead of "regular" and a few frozen peas tossed in for a sweet surprise. If I have flat leaf parsley in the garden I tear some on top and add a grind of black pepper. Prefer red chili flakes as opposed to cayenne pepper just because then not every bit is the same. Thank for the reminder- off to try this with the masses of swiss chard in the garden before they shirvel up in our 90 degree weather!
