Blue Cheese Dressing Recipe

Tart, cooling plain yogurt adds a pleasant tang to this salad-bar staple.
What to buy: Look for organic, whole-milk plain yogurt. Most organic brands that have “cream on top” are more fluid because they contain fewer stabilizers.
Game plan: If you’re using yogurt that’s not very tangy, you may need to add a little more vinegar.
INGREDIENTS
- 1/2 cup plain whole-milk yogurt
- 1/2 cup mayonnaise
- 1 tablespoon white wine vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon granulated sugar
- 1/2 cup crumbled blue cheese
- Dash Worcestershire sauce (optional)
INSTRUCTIONS
- In a small mixing bowl, stir together the yogurt and mayonnaise until smooth. Mix in the vinegar, salt, and sugar, and season well with freshly ground black pepper.
- Stir in the blue cheese and Worcestershire sauce (if using), and refrigerate until ready to serve.

Just blue cheese, sour cream and lemon juice! Substituting yogurt or crema works as well.
Could Greek yogurt be used.. it's very popular here in the UK, but so is creme fraiche.
try skipping mayo and yogurt and replace them with a good creme frache :)
I would add a small bit of finely chopped garlic to the dressing. I love when I can taste a hint of garlic in blue cheese dressing.
I will always use crema instead of mayo to make roquefort sauce / dressing.... night & day.
If you want to use less mayo, or have the dressing be thinner, I suggest adding or substituting some white wine. Not vinegar, but actual wine.
I made this recipe last night, substituting Fage 0% for whole-milk yogurt, light mayonaise for full-fat and splenda for sugar. The tase is good, very tangy but a little too thick for my liking. I think I'll try adding a little olive oil or low-fat milk to make it more viscous.
I use buttermilk and sour cream instead of mayo
I love the blue cheese dressing at Bix. Just Maytag Blue and olive oil. Divine. Also had a great iceberg wedge with blue cheese dressing at Jar in LA last weekend. Excellent too.
Sassy, you can easily leave out the mayo in this recipe. Just double the yogurt (and use really good yogurt, not that stablized stuff!) You may need a little more salt and sugar too. Let us know how it turns out.
I would love to see a blue cheese recipe that DOES NOT use mayonnaise. Thanks!
