Author and former Gramercy Tavern managing partner Nick Mautone explains that this drink should look fairly clear, with a slight orange tint from the Lillet and bitters. The taste is potent and aromatic, with a hint of bitter orange.

INGREDIENTS
splash dry sherry
2 orange wedges
2 parts gin, such as Junipero
1 part Lillet Blanc
Dash angostura bitters
INSTRUCTIONS
Add sherry to the bottom of a chilled wine glass. Dip the orange wedges into the sherry, then rub them around the inside of the glass to coat it with sherry and impart flavor from the orange oil.
In a cocktail shaker filled with ice, add gin and Lillet, and stir briskly until the shaker is frosted and beaded with sweat. Strain into the seasoned glass.
