Cartini Recipe

Author and former Gramercy Tavern managing partner Nick Mautone explains that this drink should look fairly clear, with a slight orange tint from the Lillet and bitters. The taste is potent and aromatic, with a hint of bitter orange.

INGREDIENTS
- splash dry sherry
- 2 orange wedges
- 2 parts gin, such as Junipero
- 1 part Lillet Blanc
- Dash angostura bitters
INSTRUCTIONS
- Add sherry to the bottom of a chilled wine glass. Dip the orange wedges into the sherry, then rub them around the inside of the glass to coat it with sherry and impart flavor from the orange oil.
- In a cocktail shaker filled with ice, add gin and Lillet, and stir briskly until the shaker is frosted and beaded with sweat. Strain into the seasoned glass.
I tried this twice in one weekend. It was a lovely balance of flavors. The first time, I forgot the bitters until the drinks were half gone. It was quite nice without them, but exponentially better with it!

Lillet is a much-underused cocktail component that can make your drinks really stand out. Use instead of dry Vermouth in a Vodka Martini (and use a big splash, not a miserly drip), or try it half-and-half on the rocks with citrus Vodka, garnished with an orange half-slice.
omg that sounds delicious. I love the old fashioned bitter bent to most of Chow's cocktail banter so far. It's right up my alley with campari et al.
