Rice Krispies Treats Birthday Cake

This cake doesn’t require any intricate steps or complex baking techniques. Just whip up some Rice Krispies Treats mixture, press it into molds, and use the results as building blocks for a unique cake.

Special equipment: For molds you can use baking pans, boxes, mixing bowls, plastic storage containers, or whatever you can think of. Just make sure the molds are clean. Line them with waxed paper, then lightly coat the waxed paper with nonstick cooking spray.

Game plan: After you have removed the mixture from the molds, stack them any way you like and decorate with your favorite candies, like jelly beans or M&M’s (you can even order custom-printed M&M’s on the web). Use store-bought royal icing (a sugar-and-egg-white glaze) to adhere the candies to the cake.

INGREDIENTS
  • 5 tablespoons salted butter
  • 1 pound mini marshmallows
  • 8 cups Rice Krispies cereal
INSTRUCTIONS
  1. In a large pot, heat the butter over low heat until melted. Add the marshmallows and stir constantly until melted and thoroughly combined with the butter. Turn off the heat.
  2. Stir the cereal into the marshmallow mixture, mixing until the cereal is evenly coated.
  3. Using a buttered spatula or buttered waxed paper, press the mixture into molds. Let cool.
  4. Remove the cakes from molds, stack them, and decorate as desired.

  • this can be entertainingly modified with other cereals- most popularly fruity pebbles, for more flavor and color. also, i've made rice crispies with homemade strawberry marshmallow- creamier, fluffier, and much more flavorful.

  • hilarious. awful, but hilarious - i think i'm going to make one for my bf. you may want to sub brown rice syrup (with some brown sugar, salt and cinnamon) and some nuts and dry fruit based on the power bar recipe at 101cookbooks.com (best power bars ever) if you would like something a bit less processed and a bit more hippied out

  • I hated cake when I was a kid (and totally agree with the frosting comment - cake is still not my favorite, but at least I know how to pick a good one now), so my mom would make me rice krispies treats instead. I loved it!

  • I think it's sweet. What a great idea for a kid's party, and it gives you a chance to be creative. My kids aren't big cake/frosting eaters, this would have been a huge hit with them when they were younger.

  • My 6-year old and didn't want a cake for her birthday. Well, the cake would have been okay, but she definitely did not want frosting. So after about a million suggestions (muffins, doughnuts, brownies, cookies....) we hit on rice krispie treats. I molded them into 3 different size spring form pans and layered it like a wedding cake. She was thrilled. Later, I heard of a rice krispie groom's cake. Sounds good to me!

  • Great idea. My sister's been doing this for years for my non-cake-eating nephew. She's decorated them with molded chocolate, and some sort of edible playdoh.
