Yemenite Fenugreek Sauce Recipe

This easy to make sauce is a great dish to bring to a party or serve as a snack with some pita bread.
INGREDIENTS
- 4 tablespoons fenugreek seeds
- 1/2 cup cold water
- 4 cloves garlic
- 1/2 cup cilantro leaves
- 2 teaspoons salt
- juice of 2 lemons
- 1 small dried hot red chile, seeded
INSTRUCTIONS
- Soak 4 tablespoons fenugreek seeds in 1/2 cup cold water overnight, or until they are soft and have a jellied coating.
- Place the seeds and their soaking liquid in a blender and add 4 cloves garlic, 1/2 cup cilantro leaves, 2 teaspoons salt, the juice of 2 lemons, and 1 small dried hot red chile (seeded). Blend to a coarse purée. Store in the refrigerator up to 1 week. Serve with falafel or with pita bread for dipping.

ive made it a few times now and i let the seeds soak in boiling water and rinse.. repeat for a few hours then make it. and i always have to add vinegar/lemon juice to thin it out somewhat before serving it keeps getting thick.rinsing with water takes the bitterness away
Are you sure about 2 teaspoons salt. Mine was very salty.
I added more soaking water and yet some of the seeds were so hard one could break a tooth. My food processer was able to puree most of them. Were the seeds too old?
I took fenugreek in capsule form and my doctor was amaized at how it lowered my cholesterol. I have tried tea also but it would be great to eat it if i could grind it well...+READ
