Mashed Sweet Potatoes with Ginger, Cardamom, and Honey Recipe
Exotic spices like ginger and cardamon warm up mashed sweet potatoes. A tasty side dish for cooler weather.
- 2 pounds of peeled and diced sweet potatoes
- 1/2 pound of peeled and diced baking potatoes
- 2 tablespoons honey
- 1/4 cup grated ginger
- 4 tablespoons unsalted butter
- 1 teaspoon ground cardamom
- Steam sweet potatoes with baking potatoes until quite soft, about 20 minutes.
- Meanwhile, in a small saucepan, combine honey, ginger, butter, cardamom, and salt and freshly ground black pepper to taste. Heat to simmering.
- Drain the potatoes and mash them together, gradually beating in the honey mixture.

ExpatChef, some of us have Thanksgiving meals that would accomodate this well. It's been several months since you left that comment and it still rubs me the wrong way.
Made this for an impromptu meal with friends and it was a hit - really good, though I went easier on both the cardamom and ginger than the recipe called for and was glad I did because I think it would have been too strongly flavored otherwise. As it was, it came out just perfect. Great accompaniment to a garam masala and mustard pork loin.
I think I would go with a maple sage version of this for Thanksgiving knowing there will be stuffing and other items that may not go with the cardamom as well.
This would be really nice at Thanksgiving instead of the usual sweet potato casserole and whatnot. I think I'll try it!
