Annatto Oil Recipe

Annatto seeds are used to add deep color to this oil.

INGREDIENTS
  • 1/2 cup annatto seeds
  • 2 cups mild olive oil or other vegetable oil
INSTRUCTIONS
  1. Toast 1/2 cup annatto seeds in a dry pan until they just start to smoke.
  2. Pour 2 cups mild olive oil or other vegetable oil into a small pot and add the toasted annatto seeds. Heat until the oil just begins to bubble. Remove from the heat and allow to cool.
  3. Strain the oil, cool, and store in an airtight container in a cool, dark place up to 3 months.
