Annatto Oil Recipe

INGREDIENTS
- 1/2 cup annatto seeds
- 2 cups mild olive oil or other vegetable oil
INSTRUCTIONS
- Toast 1/2 cup annatto seeds in a dry pan until they just start to smoke.
- Pour 2 cups mild olive oil or other vegetable oil into a small pot and add the toasted annatto seeds. Heat until the oil just begins to bubble. Remove from the heat and allow to cool.
- Strain the oil, cool, and store in an airtight container in a cool, dark place up to 3 months.
