	<li>Toast 1/2 cup annatto seeds in a dry pan until they just start to smoke.</li>
		<li>Pour 2 cups mild olive oil or other vegetable oil into a small pot and add the toasted annatto seeds. Heat until the oil just begins to bubble. Remove from the heat and allow to cool.</li>
		<li>Strain the oil, cool, and store in an airtight container in a cool, dark place up to 3 months.</li>
