Lavender-Scented Fruit Parfait

  1. To make lavender sugar, process 1 cup granulated sugar and 1 tablespoon dried lavender buds together until the sugar is purple-tinged and the lavender pieces are very fine.
  2. In a large bowl, prepare a combination of diced stone fruits (such as peaches, plums, cherries, or nectarines) and berries (such as raspberries, blackberries, or strawberries).
  3. Beat 1 cup heavy cream with 4 tablespoons lavender sugar in a chilled bowl until it holds soft peaks.
  4. In 4 tall parfait glasses, spoon a layer of flavored whipped cream into the bottom, cover with a layer of crumbled amaretti biscuits, then a layer of the fruit, and then repeat. End with a layer of the whipped cream. Chill for 30 minutes before serving garnished with a sprig of flowering lavender.

Beverage pairing: Farigoule Thyme Liqueur, France. The light, summery freshness of the fruit with the perfumed dusting of lavender recalls the sunny Mediterranean, making this delicious liqueur from Provence, scented with thyme and other wild herbs, a great match. Serve it chilled in a small glass.

  • Depending on the type and growing conditions, lavender can be too strong, or not strong enough. Start with half of the recommended amount, and add more if you like. In your kitchen, you're the one in charge.

  • I thought the recipe called for way too much lavender. I added some vanilla paste to calm it down but the deed was already done. Next time around I think I will use much less than one tablespoon of lavender and add some honey to the fruit. Overall the recipe is a good idea.
