Lebanese Dressing Recipe

INGREDIENTS
  • 3 tablespoons olive oil
  • 2 tablespoons tahini (sesame seed paste)
  • Juice of 2 lemons
  • 1 garlic clove, finely chopped
  • 1 tablespoon chopped Italian (flat-leaf) parsley
  • 1 tablespoon chopped mint
  • Sea salt and black pepper
INSTRUCTIONS
  1. Combine the oil with the tahini and lemon juice. Add the remaining ingredients.

  • this seems like it would be tasty on a chickpea salad

  • My family uses this on any cooked fish, on cooked swiss chard or dandelion (squeeze out the moisture). My recipe has less olive oil and I add a bit of water if it is too thick.
