Root Beer BBQ Beans Recipe

Root Beer <span class="caps">BBQ</span> Beans
Makes: 4 to 6 servings

Everyone loves beans at a barbecue. These have a nice root beer taste, but you can also use Dr Pepper, Cherry Coke, or the Southern favorite, RC Cola, for a distinctive flavor. Don’t use any diet drinks, as they get bitter when cooked.

This recipe was featured in the 2006 Make Your Own Soda Pop story.

INGREDIENTS
  • 5 slices bacon, diced
  • 1 medium onion, diced
  • 1 (36-ounce) can baked beans, preferably Bush’s
  • 1 cup root beer (regular, not diet)
  • 2 tablespoons dark molasses
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon lemon pepper
  • 2 to 3 whole ribs celery
INSTRUCTIONS
  1. Cook the bacon with the onions in a medium saucepan over a grill or side burner until the bacon is brown and crisp, and the onions have become transparent and are just starting to brown.
  2. Add all of the remaining ingredients.
  3. Bring to a boil over medium-high heat; then reduce the heat and simmer, stirring often, until the mixture is slightly thickened, about 20 minutes. Remove the celery and serve the beans hot.

  • Tried this with Dr. Pepper but without the molasses. Dr. Pepper is sweet enough. The girls in my wife's office loved it! Dr. pepper drinkers I guess. Me? Well some people are connoisseurs, I'm a common sewer. I eat and usually like everything. Yep, I liked it.

  • DiveFan; meaning that this version of sweet baked beans is abominable, or that baked beans that are sweet are abominable? If the latter and they shouldn't be sweet, what should they be?

  • I've made diet coke chicken - 1 can diet coke, 1/2cup of ketchup and chicken in the oven - yeah, I know, trashy recipy - and have never had any problems of it getting bitter when cooked...

  • Hmmm that sounds very interesting. I dunno if I would want my beans to taste like root beer. But then again, I can't really say anything bad about it since I have yet to try it!

  • Oh, NO, another abominable sweet baked bean recipe. Worse yet, the beans come from a CAN.
