Can I used cooked polenta in a cake?
I was going to make an enticing lemon polenta cake that uses almond meal instead of flour. Unfortunately, I was only able to find a log of precooked polenta -- can I use that in the cake (recipe does not specify, so I assume it means dried polenta).

Wow, thanks for these tips. I am going to try it tonight or tmw. No exhaust, but I do have a large window by the stove. I also have ceiling fans. These will all be set up to ensure maximum ventilation. A friend recommended heating the pan up on the stove until it was smoking, searing one side, flipping it, then finishing it off in the oven. So that's what I'm going to try... Was not planning on adding extra oil or grease to the cast iron pan other than what's there from the seasoning already.

I have had a craving for blackened mahi mahi for a while now and haven't seen it on any restaurant menus in my city. I'd like to just make some at home in my cast iron pan, which I am about to clean and re-season this afternoon.
I've heard that blackening creates tons of smoke from the spices and that it's better to do it outdoors or in a professional kitchen with lots of exhaust.
Well, I don't have an exhaust, and I just want some blackened fish. Was thinking of making it in the broiler so that it will be a little bit contained...
Have you done this before? Trying to gauge how stupid of an idea it is or if it just might work with minimum consequences...
Shelf life of Miso?
I just bought some red miso paste. It came in a plastic sack type of bag. After I open it, how long will it stay good in my fridge? How long can I keep using it?

Cooking w/ philo for the first time....
I am going to make a Turkish recipe tmw called Cigara Borek. It is usually made with a Turkish pastry called Yufka that is wrapped around a filling of feta + parsley like a spring roll. It is then gently fried.
I haven't been able to find Yufka in Philadelphia, so I am going to use philo. I suppose I could try to fry it, but I think I might bake it instead.
Question: would 350F be a good temperature for baking? Do I have to brush the top with eggwhite? Or a mixture of eggwhite + water???
Any tips would be much appreciated.
Odd question... do we eat muscle or what?
I have been having a debate with a friend about whether we eat toned muscle or flab in other animals, like chickens and cows. I'm referring to general, popular cuts like breast and filet mignon. Would it be tastier for most people if the animals were toned and muscular or the reverse?
I know this sounds like an odd question. It was inspired by a friendly debate about who would be tastier (were we cannibals) - I am sort of curvy while he is rail thin and toned.

Following up on this thread of multiple topics....
I still have to go to Claudio's - it seems like the best bet for cheeses. I did, however, try Headhouse Market and enjoyed the experience. It's in a nice part of town. Also went to an Amish market in Fishtown, further north. I think the produce I got there was perhaps superior. They also sold me a gorgeous bouquet of colorful flowers for only $3. I'm starting to learn that the best way, although perhaps the most time consuming, to get groceries in Philly is certainly by breaking it down in to very specific categories...
Mangoes, limes, avocados - I get at the Latin grocer in my neighborhood.
Cucumber, summer squash, blueberries, cherries, green beans, herbs, flowers - I get from a Farmers' Market.
All else I tend to get at Trader Joe's and then maybe at Whole Foods. I cannot resist white nectarines this summer. They have been divine but very expensive and only available at WF.

there is definitely mayo in that salad, but i think just the tiniest bit - it was listed on the ingredients, and there was always a little bit of whitish liquid at the bottom.
guess i'm just going to try it out - will omit the black beans. i'll let you know how it goes!!

I am going to try to re-create a bean salad that I've always enjoyed from my favorite produce mart. I tried finding a similar recipe online, but everything was more complicated. I've never made a bean salad before and was wondering if anyone had any suggestions about method, quantities, additional or subtracting ingredients. Here goes:
5 BEAN SALAD
Combine:
kidney beans
garbanzo beans
green beans
cannellini beans
and black beans (i have forgotten the last one - think it's black)
red + green bell peppers
red onion
cilantro
vinegar (apple cider probably but i'm going to use red wine)
tiny bit of mustard (i think they listed that in the ingredients)
and a little bit of mayo (i will use soy mayo).
I don't live in the same town as the produce mart anymore, otherwise I'd go check out their ingredient list again. Any thoughts ??

Hmmm I'm not sure if it's O Sandwiches. Doesn't sound familiar. Bread goes a long way, but I'm all about the fixings. The best banh mi I've ever had was at a tiny hole in the wall in NYC that has been closed and gone for the past few years. They put in pickled carrots and supremely flavorful chicken. Not sure why it is so hard to find pickled carrots here.

Yeah, I've found some gems thus far. Vietnamese here is generally good, and I am so fond of Rangoon.
Headhouse Market sounds amazing; I'll definitely post a follow up after I check it out sometime. I love your idea of getting to know various neighborhoods via their farmers' markets.
Turkish restaurants in Philly.... I have only been to Konak and was sorely disappointed. Perhaps Divan is worth checking out.

Sadly, I do not remember the name of the place, but there is a very popular tiny banh mi take out place around 9th + Christian. If you searched for "banh mi christian" in this board, you will find it. The chicken banh mi there is great, but the vegetarian one is less great. For a great tofu banh mi, go to the Vietnamese deli (I think it's called Fu Wah or somesuch) at Baltimore and 46th (thereabouts).

Cheaper to bake bread? no wheat, though

I am trying to find ways to save money. I have recently stopped consuming wheat for digestive reasons, but I love to eat authentic German rye bread and occasionally spelt (which I find to be more digestible than regular wheat).
I would love to bake my own breads, but I wonder if this is cost-effective? And difficult ?
Your thoughts would be really appreciated. Also, if anyone has any recipes that they love for non-wheat breads, please do share!

Sure. I'm not vegan, nor do I have celiac disease.
I do enjoy meat, poultry, and seafood but have decided to limit my amount of eating these things to special occasions or only in instances where the meat is very high quality (no hormones, etc + prepared well).
I have heard that gluten can cause digestive problems, so I thought I would try omitting it from my diet for a while. As far as dairy, I adore cheese and cream and will continue to eat small quantities of them, but I suspect that they also affect digestion adversely.

What happened to this place? I used to go to the 17th st. location when it was sort of quaint and charming and European, with good music on the sound system, and now it just looks like some generic, tacky place that should be next to Cinnabon on the side of the highway. I know that there are other locations - are they all so tacky??

Snack on Thompson St. btwn Prince and Spring. Perfect Greek food in the most charming little restaurant. It's very cozy, and the food is fresh and light and very flavorful. There are only 5 tables, though, so you may not get seating.
