A friend of mine suggested a light German Reisling with a tiny bit of sweetness to it as a possibility....treating the marrow almost like a pairing with a foie gras. Thoughts?

That's exactly right, and tyne wines will get pretty big as the night goes on, so I also want to make sure I keep that graduation in mind.

Hi. Can anyone recommend what kind of wine (not looking for obscure labels, but varietals and characteristics) they would pair with roasted bone marrow, spread on baguette with a lemon, parsley, caper, shallot salad (referred to all over the internet as A. Bourdain's dying meal....)? Thanks. Any explanation of why is especially appreciated.
Pork shoulder ideas
I unexpectedly ended up with a 9 pound bone-in pork shoulder in my fridge. The only dish I have made with this before is wonderful roasted pork shoulder with salse verde recipe that I got off Epicurious (highly recommend it). The shoulder is cooked for about five hours with garlic, rosemary, salt, pepper, oil rub. I'm looking to do something different that offers a whole new flavor. Any suggestions would be appreciated, particularly those in an Italian style. Thanks
