ISO: Fine White Wheat Semolina
Yes...semolina is flour from durum wheat, which is most often used in making pasta.
You can find fine white wheat semolina at Indian food stores. It may be labelled "Rawa"..."Sooji" is coarser semolina.
For sure they have it at stores in Little India - try B.J.'s Supermarket.

I'm considering purchasing a vintage Dansk enamelled cast iron cocotte (uh...Dutch Oven, I think, in English) -- but the one I was looking at has enamel on the bottom, not just cast iron.
Is it safe/OK to use an enamelled pot, which has enamel on the bottom, on my gas stovetop? Or is that kind of pot meant to be used in the oven only?

Good Egg Cookbook shop
FWIW - I was in the good egg today and there are LOTS of things on sale. Not books, at least not the ones I looked at; but lots of cooking "things" are on sale there, from linens to gadgets. Also, all the Le Creuset is on sale, 20% for in-stock items (and 10% for special orders).
I *adore* this store. It actually kind of breaks my heart to go in there, as there are so many things I love and could use and want there, and I ... don't have unlimited cash!

I've been to both and like both. OKOK is *very* diner-y; Leslie Jones is more upscale. I'd probably choose Leslie Jones for clients, unless I knew them very well and were sure they'd appreciate the old skool diner vibe of OKOK.

I found the most beautiful small jars - Weck canning jars - at the Wildly Delicious warehouse sale today on Railside Road. They are $2 a pop.

I just found a source of these (just very small ones, however) - the Wildly Delicious Foods warehouse sale on Railside Road in Toronto. You can buy them filled with a sea salt mix for $3, or empty for $2. I was thrilled to see these and wanted to share!

Going south, but not as far as Tango Palace or Red Rocket, I Deal Coffee is now open on Queen at the foot of Ashdale. Walkable from Coxwell and Gerrard. I don't know whether they have their wi-fi in yet, but they have plans for free wi-fi.

that kettle is a thing of joy to behold. I bought my LC kettle because it slightly resembled that one! (same handle)

Nah, I have a lightweight, cheapie enamelled aluminum LC. It isn't heavy, or any heavier than any other metal teakettle I considered.
Pork braised in Milk -- tips?
Yes - with fatty chops. I used a version from one of the Moro cookbooks - pork chops braised in milk (lots of it) with a cinnamon stick and 3 bay leaves. Incredible.

Oooh, I had such a hard time finding an acceptable kettle when my last one broke (just before Xmas). I ended up getting a le Creuset enamelled one, because I liked the design. (The other designs I found within an acceptable price range were ... hideous, shall we say.) I didn't buy the full-price LC but a made-in-Thailand second at a local kitchenware discount place.
What do people think of the Moro cookbooks?
I have the first and second Moro cookbooks out of the library now, and I like them - but I haven't had a chance to do much cooking from them. I'm interested in others' opinions of these books (and the new Moro East cookbook, if anyone is working with that one yet).
If you don't like these (or even if you do), what alternatives would you suggest? I've been thinking about Greg Malouf's cookbooks or some of the later Wolfert books.
I admit I really like the look and feel of the Moro cookbooks. I have most of Paula Wolfert's earlier cookbooks, which cover some of the same culinary ground, but I don't pull them out and work with them as much because they don't have pictures (I'm thinking of the Eastern Meditteranean cookbook for ex.).

No, this place just opened. I had a long chat with the owner and she has most def never owned and operated a cookware store before.
Millygirl - that dusty place (it's right at the corner of Greenwood and Queen) has never, not ever, been open in all the many years that I have spent walking by it. I have always been curious about it (I'm a thrifty scavenger) but ... it isn't any kind of public place!

I've been in. I like the aesthetic of the place, and not everything is super-expensive, but the reality is that I will probably never buy cookware there, and to be frank I'd be surprised if they lasted.
She (the owner) has All-Clad and le Creuset at MSR prices, and I'm just never going to spend that much on cookware ($240 for a saute pan? Not in my budget.)
It doesn't help that my ex-husband was a pro chef and I have been around professional kitchens for many many years and I know the quality of the results you can get with much, much cheaper tools.
IMO this is a store for lifestyle cooks...and I just don't think there are enough of those, willing to spend the kind of prices that stuff apparently commands, in the east end. At least in that nabe (which is my nabe, I hesitate to add).
Toronto: Cheap copper cookware at Homesense
I saw them yesterday at the HomeSense near Sherway Gardens in Mississauga. At that same HS, I saw a 10" Staube cocotte; a whole lot of le Creuset seconds (rounds and oval dutch ovens in several sizes and in blue and the original orange; and several copies of a recent edition of the Larousse Gastronomique (in English). I bought one of the Staub cocottes - I've been wanting one for a while and the price ($90) was right for me.
Okay Okay = NOT Okay
well...this is one of my regular brekkie haunts and I've always had excellent, if slightly brusque, service. I used to make my living as a waitress and I often feel as though I know what those servers are up against - perhaps I am more forgiving than most.
But in particular, I always come in with my two kids (ages 3 and 6), who never want to wait for their food to arrive, and the waitress always sets us up with an extra, immediate order of toast for my kids at no charge. This is the kind of thing that makes me taking my children out to a restaurant possible, and I have never asked for this - the extra toast just shows up.
I know the food isn't necessarily the greatest. (Nobody has mentioned the cinnamon margarine fake spread they use on the French toast yet!) But this is a regular, fun, low-key place for me to hang with my kids and husband, and it works for us. I've never been asked to move along, for what it's worth.
McCall's Baker's Warehouse sale?
OK, I have just come back from this sale and here's my report! If you are looking for bulk quantities of cake-baking supplies (i.e., bulk Callebaut chocolate, bulk icing sugar, bulk coloured sugars and chocolate and other chips, etc.) or if you are looking for cake-baking supplies, that's what you'll find.
There's no additional discount - all that's happening is they have opened the doors to the public, when ordinarily you would need proof that you are a professional baker in order to shop there.
It wasn't really my thing. I did see other people in there buying cardboard and foam cake forms, bulk food colouring, and cake and party plastic favours. If you have cause to use those things, this might be worth your while.
