Actually, the Italian government is so sensitive about protecting its culinary heritage, even pizza is strictly regulated. Authentic Neapolitan-style pizza must use double-zero flour (that refers to how finely it's ground). The dough must be made only with salt, yeast, flour and water. It must use San Marzano plum tomatoes. It must be a certain variety of fresh buffalo mozzarella. The pie must be baked at a high temperature (more than 800 degrees F.) in a wood-burning oven.
Anyway, I’m still looking for one.

I was wondering if anyone new of authentic Napoli (Naples) Style Pizza in Toronto or something close to it. I believe the authentic restaurant usually get certified by “The Verace Pizza Napoletana Association” (http://www.verapizzanapoletana.org/vp...)
