Dripless Bottles for Pouring Oil..?

Oxo sells an oil stopper/pourer that works well. However, the challenge is finding a bottle that it will fit into. I had to use an old wine bottle, but it works well.

Reasonably priced 12-qt. Stock Pot?

The 12 quart Tramontina Tri-Ply stock pot from Walmart is terrific and runs around $100.

IMHO, it's well worth spending the extra money to get the Tri-Ply to prevent scorching, etc.

Dishwasher Detergent, is There an All in One that works?

I've been thoroughly unimpressed with the Finish Powerballs and have gone back to the Cascade pods. Much better.

Also if you have hard water, you need to descale your dishwasher every 6 months with a dishwasher hard water remover/cleaner (they sell them by the detergent) and/or vinegar (search the Internet). Also check and clean your dishwasher filter. It will make a difference.

What to sub for ramen

Rice noodles and Udon are both good substitutes. FWIW, I wouldn't worry too much about the ramen noodles being flash fired -- it's the sodium bomb flavoring packet that is the issue.

Is my dutch oven starting to get ruined?

Looks fine to me. Enamel coating is not bullet proof and you will always get some wear and tear. As long as you don't use metal utensils you'll be okay.

"Fresh" Ham for Lechon Asado

If you want the crisp skin use picnic shoulder, otherwise pork butt works fine. Both are readily available. Fresh ham is more difficult to find retail because, well, they use it to make cured ham.

Sirloin, chuck, steak tips, brisket and boneless short ribs are all cuts that can be used in ground beef. Typically, at least 60% will be either chuck or sirloin (for cost) with the remainder other cuts.

How is the Sur La Table tri-ply (compared to all clad)

Quality is excellent and they come with a life time warranty. (SLT will even replace your non-stick tri-ply pans when the non-stick coating wears out.) The only caveat is the pans are noticeably heavier than the All-Clad line. Bottom line if the pan fits your needs, I'd buy it without hesitation.

I've seen caviar at the Morena Costco during the holidays. However, I don't know if Costco is stocking it this year.

Given the seasonal demand for caviar, my gut tells that your best option for quality fresh caviar is mail order.

Extra Virgin Olive Oil

This subject has been beaten to death a bit on the forum, but your best bet for unadulterated EVOO is Costco and California Olive Ranch, which interestingly is actually Spanish owned.

Personally, I find that Trader Joe's EVOO line up weak and flavorless, but some consumers may line the milder flavor profile.

You're right I overstated things a bit as Pliny the Elder is readily available in CA. PTE apparently has limited distribution on the East Coast.

With that said, most out-of-state beer fans I know have had no difficulty getting their hands on a couple of bottles.

Pliny the Elder is a damn fine beer, but IMHO any IPA from Alpine Brewery is better. Alpine is truly a world class cult brewery whose beers simply are not available outside the SD area. Heck, Alpine beers are barely available with SD County other than from the brewery -- hopefully Green Flash will change that.

Why are you trying to locate a No. Cal. beer that is widely available throughout the US in one of the world's best microbrewery cities?

San Diego's breweries make numerous local beers equal to or superior to Russian River Brewery Co.

If you're into beer make the effort to visit Alpine Brewery; Alesmith; Ballast Point; Stone Brewery etc.

FYI, cottonseed oil = Crisco. Crisco is simply an acronym for crystallized cottonseed oil -- the same stuff any good southern cook will fry their chicken in.

Walmart's line of Tramontina Tri-Ply is excellent. Also Sur La Table's house brand and Caphalon both sell Tri-Ply cookware that is less expensive than All Clad.

Freeze it. It's essentially the only way to store bread more than a few days.

Blood Sausage, Boudin Noir, Morcilla, Black Pudding etc.

As with all things meat, check out Iowa Meat farms. Heck, they'll even make sausage for you if you have a recipe.

Post Traumatic TJ's Stress: Please Help me Make Better PIcks Next Time

All right, I'll bite.

TJ's frozen pizzas, especially the French style tarts/flat breads, are excellent and make a quick light dinner with a side salad.

TJ also sells refrigerated pizza dough, that can be used to make great calzones. Slap some sauce and fillings on the dough, fold it in half, make some slits, brush with olive oil and bake. (See the blog 'Dinner a Love Story' for specifics.)

Also TJ's jarred simmer sauces are excellent. In particular the masala and green curry are solid. Simply brown some cut-up chicken pieces and then simmer in the sauce for 10 minutes. Service with rice.
