FWIW, the gaminess of meat his highly influenced by the animal's diet. While the foodie world is all abuzz over "free-range" and "grass-fed", historically speaking, one reason producers began feeding livestock and poulty grain based diets was to created a milder flavored product (the other reason is that it fattened up their animals and got them to market size faster).

Thus, if you're finding your chicken too gamey, I'd recommend trying a different producer including the national brands.

As for dealing with your gamey meat, as previously indicated highly acidic dishes such as tomato based sauces are your best bet for hiding the flavor.

What is a Delmonico ribeye steak?

A Delmonico "cut" ribeye refers to a small thick cut ribeye that are often tied to look like a filet mignon steak.

Menudo without tripe or pigs feet

Menudo has a great "mouth feel' because the tripe, stomach and pigs feet have a lot of connective tissue (ie., collagen) that breaks down when cooked.

To replicate this I would follow a Pozole recipe and use pork shoulder which has a fair amount of and connective tissue. You can add a couple of teaspoons of non-flavored gelatin (mix it with a few tablespoons of water first) to the soup shortly before serving.

Also great Pozole and Menudo is served with chopped onions, cilantro, oregano, lemon/lime wedges, radish, avocado that can be added at the table.

Menudo without tripe or pigs feet

Maybe I'm missing something, but menudo without the tripe etc. is essentially pozole rojo (aka red posole). Search the Internet, as there numerous sources for great pozole rojo recipes.

If you're willing to take a short drive south, Leucadia Donuts on the 101 and VG Donut & Bakery in Cardiff are both well regarded.

Costco and Wine

All Costcos are not the same. I shop at one of the top wine selling stores (Carlsbad, CA) and they stock their wine department accordingly. The Carlsbad Costco carries more high end wines ($60 plus) and they have dedicated staff who work in the wine department.
They also have guest wine makers every weekend showcasing their wines.

WIth that said, where Costco really excels is the $10-$15 price point. Costco has openly told wine producers that unless someone has scored their wine at 90 or above, with a retail price of between $10-$15, then they're not interested.

Costco and Wine

Seems like a baseless attack piece. Costco is a terrific place to buy wine, and given its buying power,it can obtain some great deals. In fact, my Costco has dedicated "sommeliers" in the wine department who are very helpful in recommending wines.

Graduation Lunch

Bali Hai would be great. Also Casa Guadalajara is very reasonable and does a good job with mid-sized parties.

Old Town San Diego

Casa Guadalajara and El Agave are respectable, the rest are souless tourist traps.

Sur la table multi clad?

The Sur La Table multi-clad line is very high quality but the pans are rather heavy, especially compared to All Clad. Some older cooks and women may not like the heft, thus try them out first.

Restaurant recommendation for a gift?

+1 for In N Out and maybe Roy's.

Best Steak in SD

Very odd. Been to Cowboy Star numerous times, always outstanding. I suspect it may be an issue of expectation. However, at a high end restaurant, I would never hesitate to send something back...

As we are fond of saying on this forum, where in San Diego County to you plan to dine? It's a big county.

However, if you're up in North County try: Blue Ribbon Pizza, Solace & the Moonlight Lounge, Mille Fleurs, A.R. Valentien, Red Tracton's, Q'ero Restaurant and Flavor Del Mar (although we haven't been since they've got a new chef).

The Fish Market. Any Brigantine Lounge during happy hour. Bring your bullhorn.

Happy Hour N. County coastal

The Brig in Del Mar is definitley worth a visit, however, the bar and happy hour can get quite busy and loud. If you go, try a week day and get a seat outside to enjoy the view. I always get the fish tacos and the Brig's day-glo margaritas, they pair beautifully.

Another suggestion is the Moonlight Lounge at Solace in Encinitas. It's a cool room and they have great designer cocktails. BTW, Relm looks great.

Happy Hour N. County coastal

You have to be a bit more specific. One's expectations for Happy Hours can vary greatly. Are you looking for the young and hip crowd; classy and reserved; drunks and cougars?

However, in no particular order: the Del Mar Brig, Union Tap & Kitchen in Encinitas, Red Tracton's in Solana Beach and Flavor in Del Mar all have active happy hours scenes. L'Augerbe in Del Mar also has an active happy hour but only in the summer. Last but not least, the outdoor Lounge at Arterra (in the Carmel Valley Marriott) used to have a great happy hour, but it's been a few years since I've been there.

Agreed. The Tramontina tri-ply stock pots are a great deal and work beautifully.

Good lord people, who cares if it's "authentic" southern bbq? Like it or not Phil's is one of the best rated and most succesful restaurants in all of San Diego County... because it's food tastes good.

Great list. Just remember that some of your choices in North County are a good 30-40 minutes from downtown with traffic.

If you enjoy BBQ, Phil's is good and worthy of a lunch. Just my two cents.

Same restaurant. Top of the Market is just the higher end version. Both are very good, however, the FIsh Market is more family oriented and loud, where the Top of the Market is more subdued and relaxed,

Favorite NV Champagne?

Bill, I agree. VC is a fine and accessible Champagne and suspect that VC has just become another victim of "familiarity breeds contempt" in the foodie work.

The story behind the resurgance of VC is fascinating. VC was languishing until it was bought by LVMH (Louis Vuitton Moet Hennessy) who modernined production and reinvigorated the brand. But the real stroke of marketing genius occured when it was one of the first large Champagne houses to sell in large volume to Costco. The price point was right (below $40) and the rest is history.

Best advice for a novice smoker?

Nonsense. Cooks Illustrated simply explains the science behind smoking and provides the home cook with reasonable alternatives to traditional smoking for the home cook. Many cooks have neither the time or the equipment to perform long term smoking.

FWIW, the amount of pseudo-science, witchcraft and flat out foodie elistism associated with smoking/Southern BBQ can get pretty comical... and yes, I do smoke the old fashioned way, and I've actuall tried CI's version and they do a decent job. Thus, do not dismiss something that you haven't tried.

Nothing Bundt Cakes?

They also have a location in Flower Hill in Del Mar. I've tried several cakes at various parties and they were good, but nothing spectacular. However, they are a nice break from the usual Costco faire.

Roy's and Donavan's are both nice; however, you would have a hard timing coming under $100 with dinner and drinks.

Business Casual dinner in Gas Lamp District

Cowboy Star is my go to restaurant for business lunches/dinners. Great food with a great atmsophere -- no shouting is required to hear your dining partner. It's very reasonable for lunch, but can be rather expensive for dinner.
