What do Chowhounds do for a living (besides eat of course)?

I'm a small-time Wholesale Distributor for Seafood... the recipes on here are amazing!

Wild Salmon? (downtown-ish)

The Wild Pacific Salmon has poor returns this year, with ongoing commercial fish closures. If you are getting Sockeye, find out where it is from and how old... I would question the freshness.

Wild Chinook, Pink and Chum may be getting on to the market soon. Again, this is a very poor year for Wild Salmon.

Salmon Chips?

depending on the time of year will determine the species of salmon you sampled, not all salmon jerky tastes the same.
Cheers!

Wild-Caught Salmon: not all the same?

Personally, I'd rank sockeye salmon to be the tastiest and richest. Once any salmon hits the freshwater the quality goes down.

Canned salmon and canned mackerel?

Canned Sockeye Salmon, Sockeye cannot be farmed, so you know what you are getting. My favorite is very simple... Add some fresh dill, a dash of seasoning salt, a bit of fresh ground pepper, freshly diced green onion... makes a great snack, but it does tend to leave a nasty smell on your breath LOL

Smoked salmon

Smoked salmon is a matter of taste and preferance. I am a small west coast producer of smoked wild BC Salmon. My team only produces quality smoked salmon... it takes a lot of time to produce, and we cater to the customers tastes in some instances. The length of smoke, the salty and the sweet... flavours of wild salmon are unique and cannot be compared with farm fish... forgive me, but you are what you eat... salmon farms feed fish manufactured pellets... wild salmon eat the riches of the ocean, and the higher price is worth paying.

Cheers!
