HELP......fingers are burning from cutting jalapenos. Remedies?
Wow so many replies, interesting suggestions milk, sour cream, lime, rubbing alcohol and hmm urine. What still works best for me after slicing chiles is cutting a tomato and rubbing the tomato on my hands and fingers. It's worked for me as I've need my fingers to remove my contact lens, no more burning etc.
Funniest Thing a Server Said to You
We were at a small town dinner club, I asked about the fish of the day and the server told me that they had fresh "seamen" I could have it grilled, broiled or blackened... We tried our best to not break out in laughter, once he realized his mistake. he said well let's just move on to the next thing. I ordered a steak instead of the fish of the day which was seabass...
On and after we at my brother in law asked for a doggy style instead of a doggy bag, guess the seamen comment through us all off that night.

Sorry I just came across this. yes we used Lety's in September 2009, they are good but always sent out different cooks. We found Jorge Rios who use to work for Lety's and we use him for two parties the last one was August 2010. Same menu and style as Lety's he also throws in quesadillas too. The Original Shrimp Place- Best Fried Shrimp Around
Oh wow I love this place, We live in the East San Gabriel Valley so going downtown to Central Market was a treat!! Haven't been there in many years. Loved the doughball soft tempura shrimp balls with the red chili sauce with lots of pepper and slighty undercooked fries.
To go it's served in the brown paper sacks. At one time they also use to fry up 1/4 chicken pieces. Yes eating in the food court was challenging last time we went it was too hard to deal with the lint from the air vents dropping in the food..

Yup Vorpal that is what happen to me, cut several pounds of chili, three hours later took contact lense out, blinded with pain for what seemed like hours!!! Rub fresh tomato on the fingers works GREAT!
Not because I think it is too hard to make, so please don't crucify me, BUT
I agree OEP is pretty good. Othewise, chili gravy from chili powder is not to hard to make. If you can make gravy it's very similar.
My recipe is:
2Tbsp. lard (or shortening)
2 Tbsp. flour or wondra
3 Tbsp. chili powder or ground chiles Pasillas used bagged chili powder not the jar stuff.
3 Cups warm water
Salt to taste
1/4 tsp onion powder
1/4 tsp garlic powder
Melt lard in skillet. Stir in flour. Make a light roux. Add ground chile, water,salt and powders.. Cook until thick around 10 to 15 min, stir frequently on low fire so it doesn’t burn or clump.
The perfectionists that make the sauce from dry chili pods, I do what is easy for me and what taste good. I make 10 times the amount listed above for my tamales

Almost 2 years later, I still agree with this. Last year, our tax rate here in LA county was 8.25, my daughter would double the tax and leave a tip. She did this in HI too. Unfortunately their tax rate was 4. something at the time...
Where would you refuse to eat in NOLA even if your brother in law was paying?
We snuck off to Stellas, Irenes and Cafe Amelie. All three of those meals were wonderful. I recall enjoying the pairings at Stella, the fish at Cafe Amelie and everything at Irenes.

Sorry to read that you were disappointed. After reading your review, I called two other places and was quoted $450.00 for 50 people. I called Lety's for the 3rd time, they catered a party for us this weekend. Same meats as before chicken, carne asada & al pastor, their beans and fixing and my rice. We paid $410 for 75 people around 68 were fed, we had very little left over meat this time.
The cook and his driver showed up at 5:30, cooked for an hour so he could serve at 6:30, kind got off to a rocky start as 20 people were in line, once he got his moves going he was fine. I had one chicken taco & one alpastor, flavors were good meat was tender. One daughter loved the asada and the other loved the chicken. Guest ranted that the food was very good. As previously mentioned, we go to several parties where different taco caters are used. I am very happy with Lety's although I will admit I have not tried any of the other 3 listed in the opening post.

I was there in January and met my boss for a lunch and a dinner, She picked Court of Two Sister for one meal and Crescenty City Brewhouse for the other.
I couldn't believe how sub par the food was. So many places to pick from an she picked these places, I ate dranks and grazed and hit other places later for a good meal.

I wear contact lens and found out the hard way I still had habanero, jalapeno and ortega chili stuff embed in my fingers. I remember a friend telling me about this and it worked. In a pinch I've also used canned whole tomatoes
Cheapest way to keep frozen foods from thawing out in my car?
I found a silver hot / cold bag at Stater Brothers for under $4.00. I've had it for years and did see some at the store today.. It folds up easily and best of all no ice is needed. You can put frozen and cold things together and it keeps it cold for several hours. I carry it around in my trunk so I always have it with me.

I did not realize my granite countertops could defrost meat to room temp so quickly. Good to know for future reference
Tamales Open or Closed
I have also been making tamales a few times a year for the past 30 plus years. I was also taught that lard is for the savory ones and a bit of butter in the sweet ones.
I was originally taught to use a white flour sack, cheese cloth or a white dish towel under the tamale can lid. As time when on the recipes and suggestions, I found that lining the can with hojas / corn husk and covering the tops really helps with the clean up, steaming and flavor process. I fold the savory ones and leave one end open. The sweet ones are tied on both ends. Savory ones are placed in the basket standing up while the sweet ones are tossed in the basket.
Oh and I never mix my tamales batches when steaming.
I make beef and red chili, pork and red chili, cheese and green chili, pineapple and raisin and cinnamon and raisin. Once again, always steam your batches separately unless you want all the flavors to mix together.
OBSESSED with chicken adobo
Oh all this talk about adobo makes me wish that I paid more attention to my Nanay's cooking her adobo and her other delicious dishes. I've tried and my siblings say it's close but I can't replicate her cooking.
I escpecially miss her pork adobo and her special Leche Flan. Family parties are not the same without her Leche Flan.

I live in So CA, not far from the TJ headquarters. Love the place,haven't noticed a culture yet I find it ironic that they dress in Hawaian style and decorate with the polynesian flaire yet there are no TJ in HI. Whenever I go visit my dear sister I have to stuff a carry on with pirate booty and fruit leathers.

While steamed rice is good, fried rice taste better. In fact we had turkey fried rice last night. The bird is almost gone!!!
Website freezes up
For the past week, my brower freezes on the chowhound site. I don't have any issues with any other website just chowhound. It seems to freeze up when I am reading some replies and attempt to scroll / page down. I have to close my browers and go back in again.
Anyone else with this issue?
Stand Mixer - Which One?
The refurbished prices you mentioned aren't far from a brand new one that maybe on sale. I got mine around 4 years ago @ 40&% off. I enjoy cooking and baking, howver I mainly use this for cookie dough mixing and cake batter mixing. During the holidays, I bake mass amounts of cookies and this mixer has been a blessing for me. Other then that, this big boy KA Pro sits on my counter with a nice cover that I purchased online.
For me, the KA works just fine as I stepped up from a handmixer. Think about what you will be using it for. As I mentioned, I bake over 80 dozen cookes during the holidays, so this mixer has saved me much wrist action.
Turkey hangover - Have u dined out this weekend?
We had pizza last night. Even after giving out lots of leftovers, we still have plenty to get us thru today. Trying to use most of the turkey for some turkey mole just to kick it up a bit.
