Actually he is special. In my hiring days I would look for people who cared about people, not so much the food, that was the easy part. If you really cared about people you wouldn't send out a bad plate.

Can anyone suggest a place to purchase excellent naan?

The best Indian flatbreads are IMO from Everest on Grand. The naan are light, puffy, crispy outside, and twice as big as the average naan.

But you know naan should be eaten fresh out of the tandoor or else it just becomes chewy flatbread.

That is true in every business. My understanding of "not as good as" in the restaurant business is that it is at the very least good.

I cannot believe this happened. Food is so simple. It is done properly or not, and there are no secrets. Use basic cooking techniques, adapt it to the flow of your restaurant, and then add your own personal touch.

Crust Lesson -- Punch Pizza?

Never believe the pictures you see in magazines. Food photography is a lot like taking a glamor shot for a cosmetic company. Move that parsley a quarter inch please, there, much better, not!

Couple of things you can do if you're making it yourself. Form it by hand but cup your hands praying mantis style as you rotate the pizza dough. Next, sauce it but not too much on the inside. Finally, when making multiple pizzas, always use a different spot of the oven for each pizza. Even though the oven is hot, the pizza dough sucks a lot of heat out of the stone.

Yes, and to make matters more complicated there are three grades of Prime, three grades of Choice, and two grades of Select. It is not differentiated for the consumer.

I will make a few calls and ask if there's a way to ID the meat.
