really liked my meal at king chef, I had green chili on a burger and my wife had a really excellent burrito with green chili on it.
coaltrain is great and has a lot of high quality west coast beer that I can't get at home.

This thread says a lot more about the people posting than the restaurant. I strongly agree with your comments about how people's economic circumstances affect their perceptions. EMP is a pretty reliable restaurant in my experience.

I think Corton is far far better than craft and more interesting than kyo ya, which is traditional japanese food done very very well.

What kind of Le Creuset pan to cook pasta in? (and how to drain the pasta?)
It's hard to know whether you are serious, but I would say that a Le Crucet dutch oven is a really useful basic tool that is worth the cost because it's really good at things like braising and making stews and being able to use the same pot on the range and in the oven is useful.
many of the things you mention are better done in a saucepan, and while I'm sure le creucet will sell you one I think that a lot of things are best done in a metal saucepan. I bought an all-clad one from amazon for less than I would have paid at a department store, but there may be better deals out there. america's test kitchen recommends the one I have, FWIW. the 12 inch size is versatile.
there are somethings, like boiling water, that don't warrant the expense of a le crucet. I often make pasta in a glass pot which transmits heat well, but a stockpot also works fine. the post above about boiling water is dead on.

Sushi Ko, even with Koji, lags far far behind the sushi available in NYC. I don't think that's debatable.

The bookstore could have been Bartleby's used books, which was on M street for a long time. There was also a used books store on 31st whose name escapes me. Bridge Street Books is on Pennsylvania ave near there too, but you couldn't have gone west to get there unless you were in the Four Seasons.
Per Se Price Increase
Landmarc TWC's kitchen is probably about a tenth of the size of Per Se's. I've read that Per Se has it's own part of the loading dock.
BAM-BAM: Stuck Inside of Fort Greene with the NY Blues again
I think walking towards Prospect Heights is a much better idea than eating in Fort Greene. I live in Fort Greene and don't think any of the neighborhood spots are worth the money.

I've bought some from the duck farmers at the Fort Greene farmer's market, Hudson Valley Duck Farm. While I've only bought small quantities I would ask them about buying in bulk. Brooklyn Larder and Eataly have it, but I have a feeling your price complaints are probably true there too.
Is Corton really as good as it looks?
i went in late august and it was as good as it has ever been. agree that the desserts aren't as strong as the savories, but the food is probably my favorite in manhattan.
Blue Hill Farm or Lotus of Siam
i wouldn't say the preparations at blue hill are simple. they aren't edgy and they don't use things like foie but i think the food is ambitious and more sophisticated than it appears. they don't use a lot of salt, and i would guess they use less stock and butter than other places.
any high quality sushi in brooklyn/queens??
i don't think ki is anywhere near as good as the better manhattan places.

The beer is well priced for what it is, meaning the prices on the beers they stock are less than they are elsewhere.

I think Corton is one of the two or three best place for food in the city right now. Service is spotty and the room isn't that great. Wine list is decent.

I agree with you about the graphic design and the way it's written, but I think the ratings are the most reliable of the major sources. The NYT is no longer reliable at all.

Best places in South Brooklyn (i.e. not Williamsburg) for Belgian beer selection?
The suggestions above are all good, and I would also check out 4th Avenue Pub, Pacific Standard, Great Bar Harry, and Mission Dolores. None of these places specialize in Belgian beer but they will have a few (and many more Belgian style beers from other places).
