Sounds great! Here are my additional suggestions:
1)Steamed carp (or whatever whitefish they have in that town) with Ginger/Scallion/soy oil
2) Sticky rice with shittake/chinese sausage (all ingredients easily packable in suitcase)
3) beef meatballs with scallion/ginger/sesame oil (very quick)

In Search of a roti canai recipe
Alkapal and Sixelagogo, Thank you for all these great links. Will check them out and definitely let you know if any of them were a success. Alk - yes the Malaysian roti canai's are extremely buttery and the texture is very flaky compared to Indian rotis. You should try and get your hands on some, if you get a chance. They are served with a curry dipping sauce.

Try Good World Bar and Grill on Orchard St. in Chinatown. It is Swedish and Swedish inspired. I've had a delicious beet burger there and a great hash of sirloin, smoked venison sausage with raw eggyolk and beets for brunch. FYI, on Friday, Saturday nights, it's like a small, busy nightclub with a DJ. You know, so you can eat your herring and dance to some hip hop.

Chikalicious or Room 4 Dessert?
I was a bit disappointed with Room 4 Desserts' stuff, very mediocre. And Max Brenner is like The Cheesecake Factory of desserts. I wish I had a suggestion in their place.
Haven't tried Chickalicious though.
Falai/Bistro Azul/Little Giant
Little Giant is very cozy. The owners are not about rushing people at all. My friend accidentally broke the bench outside the restaurant (it's a long story) and offered to pay for it and they said: nah, just come back and repay by eating there again.

Saravanaas on Lexington and 26th St. has chole batura. They have a lot of other fun South Indian foods on the menu. It's vegetarian, so there won't be any lamb there though.

Bar Carrera on 2nd Ave. and 11th St. is cute, good and cheap. They have a delicious coke and red wine drink.
Casa Mono on Irving Place is not super Spanish but it's really good. They also have a cheaper sibling next door at Bar Jamon.

Vietnamese Rice Paper for Fried Rolls?
Yes, those are the ones used for authentic VN fried spring rolls..a little more work, but definitely worth it. If you don't want to get them too wet, you can try spritzing them with a water bottle.

Alta- beautiful space and lots of med-styled "tapas" that people can share. You can order the whole menu which is fun for a big group.
Gradisca- solid Italian, nice service. (West 13th)
Malatesta- Gradisca's cheaper sibling. (Washington St.)
Blue Ribbon on Carmine St.- new american, classics and adventurous stuff.
Do Hwa- Korean on Carmine- red walls, nice sake selection, good for groups.
Paris Commune- If you can't get a reservation anywhere, try this place. a nice big, room, French bistro. (Bank St.)

New Yeah Shanghai Deluxe- I would highly recommend this place for a group outing. nice ambience, lots of good menu selection. great soup dumplings. (Bayard and Mott)
For wackier eating, there is XO on Hester, just east of Bowery...huge menu, rice noodle crepe, stews, even Malaysian food.

Falai on 68 Clinton is a fantastic, modern non-tomato saucey joint (Ex. Ricotta gnudi in brown butter kind of deal and lots of meat entrees. Reservations required.)
Les Enfants Terribles is a fun, french bistro in the deep LES (canal at Ludlow)
Little Giant in the LES has great food and nice ambience. (Reservations are a good idea.)
Lucien is a another cute cozy French bistro on 1st Ave, just north of Houston.
Barriochino (on Broome St. below Deleancey) is good Mexican with an impressive selection of tequila.

Banh Mi?
Saigon Banh Mi is really good. The chicken is great, the cha and pate one great, the cha siu pork one is tasty but heavy. Authentic is a tricky word. They are delicious, but they may be a little different then the ones you grew up with, as the couple who runs it are Chinese from Saigon. And So. 1 is right around the corner, so you can just pick up a couple and compare.

What to get at Vietnamese Restaurants....
1)Grilled pork in a light fish sauce (Bun Cha Hanoi.) Really yummy.
2) the fish/pineapple soup is a great dish to share family style.
3) shredded chicken (or shrimp) and cabbage salad
4) Stir fried beef with watercress (Bo Luc Lac)
