What to do with Rasberry Simple Syrup?

I tried making a raspberry sauce with a pint of fresh raspberries, sugar, water, coconut rum, and some cornstarch. It was supposed to go over pancakes.

It never thickened and the raspberries broke down. It's very runny. Good otherwise.

I figured I'd go ahead and strain it which leaves me with a very thin simple syrup.

Suggestions what to do with it? I'd like to not waste it. It's too cold for iced tea.

Next time I'll do some more research before attempting the experiment. LOL

Oh, and if you have any suggestions for how I could have used them for pancakes let me know. :)

Foodmill and Asparagus Soup?

Would a foodmill do well with asparagus soup? Had a hard time with the fibers. Ended up improvising with an oriental latice-like dipper/fryer spoon thing I had after I tried running the cooked roasted asparagus in the blender. There were still huge gobs of gumpy, fibrous asparagus. And yes, I used thin asparagus stalks, roasted them, then put them in the stock.

It was messy and a pain, but I LOVE roasted asparagus soup! :)

I am interested in one also for tomatoes as the skins and seeds are supposed to be kept out.

I got some gluten free pantry all purpose flour - it has white rice flour, potato starch, tapioca starch, guar gum, and salt in it.

I am looking for a good bread machine recipe for it and can't find one.

Do I need to add xanthum gum if it has guar gum?

Red Wine Gravy Recipes?

I went to the Cornish Pasty company in Tempe and they had this red wine gravy they served with their meat pasties. No idea how it was made, but I'd sure like to find something like that!

Suggestions for Dry Sherry?

I bought "dry sherry" some time in the dim past for something. Then forgot I had it and bought it again. I tried just drinking a glass of it and it was a bit too sweet for my taste. Hate to waste it tho!

I don't eat much seafood, either, although I like beer battered fish fillets and possibly scallops. Going to try scallops this week - with one of these sauces and sherry! :D Any of them would be good with chicken too.

What to Cook When Your Allergic to Just About Everything

Remembered this on Food Network with tapioca flour. Might be other things you could use tapioca flour for. Been meaning to try some of the specialty flours I see in the store - just never got around to it.

What to do with whole roasted garlick?

You can make tomato soup with canned tomatoes added to sauteed onion, celery, carrot (mirapois). I don' t the recipe but you can find it. Then add the roasted garlic to it. :)

I have some french bread and garlic in the fridge. Glad I found this thread! :D

Black Eye Pea Fritters

Don't know about fritters, but I remembered Paula Deen doing a black eyed pea cake with catfish that was kind of like a fritter. Bet it'd be really versatile!

Suggestions for Dry Sherry?

I have 2 bottles in my fridge. Too sweet to drink. :( Don't really know what to do with it.

However! I just came up with something sooo yummy to share! Came up with the idea after seeing some sherry cream sauce recipes on food network site.

Balsalmic & garlic dipping oil (Safeway olive oil blend)
Length of Kielbalsa (polish sausage, I use turkey)
Diced onion & garlic
Salt, Pepper
Frozen Corn
Fontinella cheese
dry sherry
half & half

I sauteed the garlic & onion in the oil and added the kielbalsa, salt & pepper. Once it was done the way I like it, I added a bunch of frozen corn. Sauteed that a bit, then poured some dry sherry in it, cooked that a bit, then grated fontinella cheese, then a bit of half & half to make it creamy.

I was cooking for a single serving, and not measuring, but it was sure yummy! I snipped some green onion over it before serving.

Next time I'd like to toss in some roasted broccoli. :)

Hmmm.... that might be a good snow day trick - on the wood stove. Along with a can of condensed sweetened milk for dulce de leche. :)

Well whole groats reheat ok. Oatmeal as you buy it in the store, like Quaker - no. Gumpy is the best word to describe that. lol

Ooo! i was thinking that this morning - I wonder how real grits would taste if I liked the 5 minute cooking ones. How long does it take to cook the stone ground grits? I'm going to be in the city alot this month, maybe I can find them.

Do they reheat well? I cook for 1.

I know you can do groats or steel cut oats in the crockpot - YUM! And they reheat in the microwave well enough to make it worth making a small crockpot of oats once a week for 3 or 4 breakfasts.

I actually just barely tried grits a couple of years ago after watching Paula Deen making them. I never had them growing up.

I love to buy one of those $6 turkey hams, slice it up and freeze it so I can pull out a slice, fry it up, and have it for breakfast with grits. I generally get the 5 minute grits - not the instant (didn't like those). I put a little butter, salt, pepper, garlic powder and maybe some other herb blends.

This morning I added a few drops of tobasco sauce (I like Tapatio's because it's mild) and DUBLINER cheese (it's a cheese imported from Ireland that is really good, discovered at Trader Joe's, but it's now at my Safeway store). WOW! It was SOOOO good!

If I have them, I chop up chives or scallions on top. I like to put it in a nicely warmed soup mug for my out-the-door breakfast. :) If I'm at home and in the mood, I'll scramble an egg laced with tobasco and cheese or salsa and mix it in.

Love to see any other good ideas for grits.

Baking Racks that have small squares?

I watch way too much Food Network! :s I keep seeing them using these square baking racks (with little waffle like squares) for things like bacon.

The only thing I find that looks like that are called "cooling racks". I am wondering if they are the same? Can they be used in the oven to bake things like bacon?

Any reason not to cook w/beer in crockpot?

I want to make this recipe, but I'm wondering if it can go in the crockpot instead of on my stove for 3 hours. It's a shredded beef recipe. I have a roast I was going to use instead of flank steak. It calls for beer.

Would doing it int he crockpot several hours make it overpowering?

Anything I've ever tried to make with beer ended up being overpoweringly beery.

Cauliflower? Ummm... Yummmm!

I have had balsalmic vinegar in my cabinet for a couple of years - yes, the same bottle. LOL I recently really discovered I love it this summer when I was experimenting with homemade salad dressing.

Yesterday I bought some Gruyere at Trader Joe's when I was in the city. I can't wait to try grating it on my roasted cauliflower! Wish I'd thought of it last night.

Cauliflower? Ummm... Yummmm!

I just discovered roasted cauliflower! Who would have thought such a humble rough ball of pungent nubs could be so tasty!

I cut some florets up and also quartered a thick slice of red onion and rough chopped a clove of garlic for this experiment.

Drizzled with olive oil
Salt and pepper

Roasted on foil lined pan for about half an hour at 450 degrees
Transferred to a square stoneware plate thing I have
Drizzle freely with balsalmic vinegar
Put some grated parmesan and sharp cheddar over it
Warmed it up a bit in the oven

Served with a thick slice of french bread with butter and garlic powder from my brand new bread machine.

OOOOO man!

Any other yummy ideas for cauliflower? I'm sooo hooked!

Silicone Mats, etc.

I saw the tail end of something on tv about using silicone mats to line pans when roasting, baking etc., to make for easy cleanup. I guess... Is that what all those silicone things in the store are - liners?

Do they work well?

Are they intended to take the place of foil or something?

My oven burns everything, so I usually cook mostly with stoneware because the heat seems to distribute better. Recently started doing some roasting, tho, so was thinking about the usefulness of these mats.

Savory waffles

I helped my nephew make a very basic egg salad from a kids' cookbook the other day. I've never been an egg salad fan - eggs can't look or taste like eggs for me to enjoy, and they can't chirp! They must be well seasoned!

I digress...

The thought that keeps running thru my head is how great that would be on a savory waffle! Since you can season the eggs any way you want....

It was as follows:

2 hard boiled eggs
2 tablespoons of mayonnaise (I think - we only used 1 egg so halved it)
1/2 tsp celery salt
1/4 tsp pepper

We put some chopped smoked ham and a crumbled ritz cracker and some grill seasoning in it. :)

Cooking with fresh figs

Look on Food Network - Giada Di Laurentis - or however she spells her name - for a Fig Tart. They basically sliced the fresh figs and arranged them on a rolled out pie shell, then folded the edges. They might have drizzled with honey and baked. Can't remember. That's what I'd try!

Rib Roast Side Dishes?

I saw a recipe for roasted potatoes - small red potatoes tossed with olive oil and rosemary and garlic and salt. Served with a lemon aoli. (Mayo, lemon zest) It was a Rachel Ray recipe and it looked wonderful!

You might also look for something like lemon orzo or a risotto. That'd be great too.

I like to serve them on a small red potato that has been baked in foil with a little olive oil & salt.

Both those are the most yummy comfort foods!

If you have a small crockpot (not hot pot!) I can suggest trying some of the cake recipes out there. Search for dump cake crockpot recipes and you'll find some great ideas!

You forgot the chopped pineapple and nuts on top. I've also found site somewhere for it in the crockpot with several variations. Just do a web search.
