"A little gourmet hole in the wall" - their saying, not mine.
Found this little restaurant called Cafe Profusion on our I70 drive from Glenwood back to Denver. What surprise! It was listed high on TA which I find often doesn't mean much for food quality, but this time was spot on: http://cafeprofusion.com/index.html

Awesome roasted vegetable soup & tasty ribs. Most of the food has a thai or indian influence. It truly is a hole in the wall. Just a couple tables in a tiny place in an old building. If the weather is nice, get the food to go, and go sit by the big reservoir which is only a couple blocks away. We sat out on the sidewalk area an enjoyed talking to the owner who obviously had a passion for what they do.

A lovely solo wine/dinner experience

I went again last night for after dinner drinks. Same friendly atmosphere. The person beside me at the bar had a salad and soup that looked very good. She was a regular customer who told me that she always loves the soups there.

A lovely solo wine/dinner experience

Zambrano Wine Cellar, Fort Worth.
stumbled on this place while attending a conference a couple blocks away at the convention center.
What a great selection of wine! I sat at the bar and enjoyed the friendly ambiance over a few glasses of wine and a pizza. The wine was fantastic. The pizza was good but not spectacular (nothing like the fabulous TX pizza I had recently at Dough in San Antonio). I you like good wine and a nice small restaurant atmosphere it's a good alternative to the places a few blocks up at sundance square.

I did try the Brick Oven. I had a pizza which was quite good. Nice thin crispy crust, not heavy the cheese (my preference), and fresh veggies along with a good italian sausage. It's also right next door to the Crown Plaza which is convenient.

ended up at Mr B's tonight with a friend. Had a very nice meal of lightly seasoned grilled redfish - delicious! Finished off with the bread pudding, very good (but not as good as what my spouse makes) Excellent service at the bar from Brian & crew!

anyone have any suggestions for good eats that aren't way salty?
Looking for a nice dinner for a solo business traveler (tend to eat at the bar when by myself)
One night near Canal and Carondolet then a couple nights by the airport.

Went to Luke tonight on the recommendation of my hotel. Food wise - very average (& salty). The gumbo we make at home is much better.

Pizzeria Biga in Southfield, MI--- add this place to the debate

went to Pizzeria Biga tonight after reading the postings. It was excellent. Sat at the bar and had a few glasses of wine with a sausage, onion and roasted eggplant pie, very delicious. Thin crust with just a little charring around the edges.

Recommendations for Louisville, Co

3Margarita's is a local Mex chain. I think it's a couple blocks from the hotel.
I haven't been to the one in Louisville, however the one in Arvada is a favorite.

If you can get to old town Louisville try Pasquini's or the Blue Parrot.
