Country-Style Pork Ribs, Homey and Hearty

I like to brown them in and then cook them in a pressure cooker in BBQ sauce, then finish them on the grill to reduce the sauce to that wonderful, caramelized goodness I love on BBQ. I love this cut of "ribs" done this way. I've heard that this cut is not allowed in many BBQ rib competitions, not only because it's not technically ribs, but also because it's so good it's like cheating! I love to do everything I can in a pressure cooker -my favorite thing in the kitchen, besides my good knives.

I have enjoyed variations on his drink that we've made using substitutes for the Belvoir Elderflower Pressé, which we haven't been able to find yet. It works well with sparkling water and an elderflower syrup, or even St. Germain, though at that point it does indeed become a bit different, though enjoyable just the same. Cynar is available at Snyder's on Capitol Hill in DC. Mass Ave & 3rd NE. It's a great shop with a very helpfull staff. FWIW, Jason Wilson of the Washington Post has just written an article concerning Cynar.
