What can be added to add umami to galbi tang? I've made it on occasion and also noticed that it's missing 'something'. Is there anything that can be added to galbi jjim? thanks!

The US has banned the import of Japanese beef. Any restaurant that still sells "Kobe" beef from Japan is either not being truthful or is smuggling it in from Japan (not likely).

I don't know why the Monterey Park location insists they're still part of the City of Industry location. At the City of Industry location, there's a sign in Japanese stating that they're not affiliated. There's also rumors of litigation. Either way, not affiliated..at least not any longer.

Korean short rib soup help

There's a newly opened Korean market that has flanken style short ribs on sale at $1.98 per pound. I'd like to make an soup similar to an oxtail soup. Is the method the same? I usually either soak or briefly boil the meat to remove the blood and follow with a slow long simmer with garlic and ginger. I've never actually had short rib soup so any suggestions are appreciated.

Can I use chicken stock as my base for turkey gravy?

This is my plan: spend this weekend making chicken stock using whole chicken parts, back, and feet along with a few aromatics. I'll freeze the stock. Fast forward to Thanksgiving. Can I use the chicken stock to make the gravy? I plan on using the turkey drippings and fond for more flavor. Will this co-mingling of poulty make for a funky flavored gravy?

I just tried a little bit of heaven

Just a warning-if you're planning on placing a special order, be VERY careful. I ordered 3 cakes to bring to an anniversary party. I went in person, chose the cakes, and placed the deposit. The day of the event, I went - they insisted that the cakes were on order for the following day. They apologized and said it was a mistake on their end. We ended up picking up a large assortment of premade cakes. They applied our deposit to the order.

The following day, they called my cell phone repeatedly telling me that my cakes were ready for pick up. I explained the situation, they insisted that we still come and pick up the cakes since they were made just for us. They called my cell phone over three times in one day. They called the following day as well....I stopped answering at that point.

This was the Azusa Blvd. location.

Would you cook expired corned beef?

Thanks for the replies! The package wasn't bloated and the meat wasn't discolored so I went for it. I did soak it in cold water for a while..I was afraid it'd be too salty. I threw out the brine to be on the safe side. I'm still alive and my stomach feels fine. It was a little on the salty side, but I think it had more to do with the brand than the age. (I bought two packs back in March, ate one right away and that one was a little salty as well.)

That's the one. It used to be packed to the gills with a waiting list for lunch. We went recently and found it be pretty empty during the peak lunch hour. It makes me wonder where everyone is going for their fix? I've been to BCD, it's pretty empty at lunch as well.

This might be out of your way. How about Ojiya in Hacienda Heights? Its located in a strip mall off Gale and Hacienda. Yakitori, small plates, noodles....try the Kaisen Zosui if you like porridge.

I've been assigned Nigella's ham in coke for Easter dinner. The recipe calls for a bone-in fresh ham. I called Ralph's meat department and was told that there is no such thing as a fresh ham - all ham is smoked and cured. They said that a fresh ham would basically be a pork butt/leg or pork shoulder. Now I'm confused.

Is there anywhere I can pick up a 'fresh' ham in the San Gabriel Valley/OC area?
