Hi, Hounds
Need some recs for Tyson's Corner - McLean area. We'll be at the Ritz Carlton Feb. 20 - 25. Would like to stay in the area and not stray too far. We'll be working long days from Feb. 22 to 25, so don't want long cab rides to the restaurant. Willing to travel longer on Feb. 20 for birthday dinner.
Last year, I took your recs and went to Landini Brothers in Old Alexandria and absolutely loved it. May try to get there again for the b-day dinner. It's about 20 miles from our hotel.

We stopped here on the way home from Orange Beach in July. I loaded up on lots of seafood. The tuna was the best! Everything was so fresh.
What is up with the cheese sandwiches?
Yesterday morning I had a grilled cheese at the Clover on Bourbon Street for breakfast. It was divine!!! With a side of pickles. MMM.. When I cook them at home I put the pickles on them. I fancy it up a little with cheddar instead of American cheese.

I have a weekend in Savannah coming up in September. Staying at the Hyatt and would like to stay down in the historic area. No Paula Dean restaurants, please! Nice wiine list, entrees in $20-30 range. Any suggestions?
the annual frustrating search for a good peach
Oh, I feel so spoiled. I live near Chilton County, Alabama, which has some of the most amazing peaches. I just made cobbler last night to get rid of some!!! I buy an entire basket almost every weekend and then distribute them out to family and friends. I think you have to live near where great peaches are grown to get a great peach.
The early peaches are "cling" peaches, which cling to the pit. Later peaches are free stone and come off the pit easily.

100 Best Dishes in Alabama
This list sounds a little suspicious to me. I have lived here all my life. In Montgomery, some of those items are legit; some are not. Catfish and collards at Isaiah's?? I think not, unless you're into overpriced, frozen food.
Some of them are classics and good every time, but I smell a marketer.

In the Certo package you will find recipes for "quick" jelly which use juice.
Transporting and Re-heating Soup?
How about a good, old-fashioned thermos? You won't have to refrigerate it and maybe won't have to heat it. And you could keep a "real" bowl and spoon at work to use to eat it!
Bacon Fat - do you use it? How?
Add some to the pot while cooking greens or peas. (Southern favorite!)
Use as the oil in O&V dressing. I did this when I was young and could eat whatever I wanted. Not so much anymore!
Add to chili.
My mom used to put it in a coffee cup and add water. After a while, the grease congealed on the top and the brown things sunk to the bottom of the water. Then she scooped the grease off the top and added it to her refrigerated bacon grease jar.
Soon to have LOTS of habaneros and super chilis
Habanero pepper jelly!!! It's great with cream cheese and crackers. Sounds kind of lame, but people love it. My sister and I make habanero jelly and it's wonderful.
Don't forget to wear lots of protection -- gloves, glasses and a painter's style mask -- to avoid accidents.
