I always precook my fish because by doing one type at a time, I can get them all cooked properly. I would, however, leave them all a bit undercooked so that you don't overcook when reheating.

Eloping in DC

Tom Sietsema always says that when you do an occasion like this, you want to eat at a restaurant that will be here for future anniversaries. I'd say Tabard Inn would be perfect along those lines - delicious, charming, and with a gorgeous patio that time of year. You could even get a room there if you'd like.

Roti is somewhat similar. Not as many toppings, and you don't do it yourself, but their hot sauce is to die for.

Ideas for puff pastry appetizers?

I was thinking about this more and I feel like our ideas, while delicious, aren't very BBQy. I thought that a raw corn and tomato and basil salsa would go with the pastry while being more BBQ appropriate. Or, for more substantial, chop or shred some cooked chicken thighs, mix with BBQ sauce, place in your pastry cups, and top with a spoonful of cole slaw.

You could also try dressing just the onions and green beans and serving a dollop of them on top of a fresh slice of watermelon, then drizzle a bit more dressing over the top. It could be very elegant!

Unrefrigerated side/snack

Get a bread dough (or make your own), roll it out, spread it with ham and swiss or turkey and cheddar or pepperoni and mozzarella. Roll it up, place on a parchment seam side down (halve it if it's looking too thick). Let it read for 15 minutes or so and then bake. Slice and package. You can bring a dipping sauce if you want, but it'll still be great on its own.

I also like to have mine handy for browning pretty much anything. Roast chicken looking a little blonde? Go ahead and brulee that skin to crisp and brown it up.

Absolutely the dinner you need will be at Birch and Barley. Lots of great bars to wander around to before an after, phenomenal food, incredible beers. Upstairs is Churchkey, where your husband will appreciate the cask beers. Please save room for dessert. It's stellar.

For explorations, get to 9th and U and enjoy Ethiopian, which is fantastic in DC. My favorite is Etete. For drinks after, go to Dodge City, Dickson Wine Bar, or Vinoteca.

For drinks, you MUST get to The Passenger, at 7th and New York. Their drinks are amazing, they have fun beers, and it's just a great spot.

If you're open to make them ahead of time, just spread out your puff pastry, sprinkle it with gruyere and prosciutto, roll it up, slice and bake. Easy and elegant.

These answers make me want to go buy a pork loin, some nice bread, a bunch of toppings, and make them all.

Bratwurst Patties

Brown in a pan, then make a pan sauce with sauteed apples or pears, shallots, sage, white wine and cider. Serve on top of spaetzle. Bratwurst also goes well with curry (see: the German currywurst). Season the patties with curry powder, then grill. Top with mango chutney and serve on naan instead of buns.

YES. He is taking over the Iron Gate, that gorgeous spot down an alley across from Tabard that used to be (insert meat) potato and broccoli. An incredibly untapped location with previously awful food. I'm pretty psyched.

What part of Alexandria? If you mean Old Town, I'd throw out Majestic for a great menu and gorgeous drinks. Will it be just you? It;s a good place to eat alone at the bar. Vermilion has been amazing too, but the chef recently left to take over elsewhere. Or are you looking more casual?

Pairing Passion Fruit Sorbet

Turn it into a spritzer. Get a very sweet moscato d'asti, put a small scoop of your sorbet in a flute, and top off with asti. If you want to emphasize that it's a dessert top with a dollop of whipped cream and stick a lady finger in it!

I'm gonna overrule the couscous because, as much as I love it, you have hummus and pita for starch. I'd do a good yogurt/feta sauce and grill some zucchini and yellow squash and cherry tomatoes and that feta sauce will be great with the meat, as well. Throw in your cuke/tomato and you've got a great meal - one of my favorites for entertaining, because it's so relaxed and casual as you all dig in.

I feel like a broccoli slaw with currants, shallots, and almonds would go really well with this. Or I also love thick slices of vidalia onion grilled over low heat with a honey mustard glaze.
