Heh - I have totally been wondering about that (the eggs baking into the dough). I will try it and let you know how it works out!
I love Ranger cookies - they aren't fancy but they are so satisfying. I've seen the version with coconut and cornflakes, but this is how my grandmother made them and I'm not messing with grandma!

I had every intention tonight of being virtuous and having a cold noodle salad with lots of veggies, but boyzoma's salisbury steak sounded so wonderful I'm having that instead, served over blue cheese thyme soft polenta with a salad on the side. I can just be extra-virtuous tomorrow.

What's for dinner #145 [old]
I never tire of them either, but I've been craving them lately especially since it's been so warm here. Still, it's going to be cold and wet this weekend, so I think I will take advantage of boyzoma's directions for Salisbury Steak as a last gray weather hurrah. Mostly in the summer we eat grilled lean meats, veggies, the aforementioned lettuce wraps, and salads, especially cold noodle ones.
Also, I bet the fig balsamic was wonderful. I definitely am going to try that.

We're having chicken in lettuce wraps tonight. And Blueberry Boy Bait for dessert. And since I baked bread today I'll have to have at least one slice of that (with butter, naturally). And plenty of unsweetened iced tea (my whole family is from Alabama and not one of us cares for sweet tea. Philistines, the lot of us).

Yeah...Not too long ago I lived in a teeny tiny house with an itty bitty oven (none of my baking sheets even fit; I had to find smaller ones) which I believe had been there since the 60's. Never had a problem with it. Newish oven? Big problems.

See, I didn't know just what to say to that because I was afraid I'd say too much. Even without being a baker, I still use my oven all the time for cooking. Maybe he just doesn't know anyone who likes to cook.

Today, I've made Italian bread, molasses cookies, and am just about to start Blueberry Boy Bait for dessert tonight (we're having company and I wanted something easy). Tomorrow, Almond Joy cupcakes! My oven is finally working again so I am using it like there's no tomorrow.
Incidentally, and slightly off topic - what happened to the oven is the ignition coil went out. We just had it replaced a year and a half ago. The electrician looked at me and, perfectly seriously, commented, "You must bake a lot. You know, these ovens will work for years without a problem if you don't use them all the time."

We had hot dogs with mustard, chili, sauerkraut, and grilled onions. I'm not gonna lie - it may not be the fanciest dinner in the world, but it was absolutely satisfying!

I don't love green peppers; neither am I a huge fan of crookneck squash. But I would eat either if they were served to me. I suspect I'd like crookneck squash if prepared differently than what I'm used to - my mom always cooked them to death, and it was like a watery yellow mush.
I do love brussel sprouts, cauliflower, lima beans, and many others that many people don't care for.
Things you want to bake
Oh, for me, too! It's one of those things that I know I can do it, I just have to start. Puff pastry, too. And on a much simpler note, smittenkitchen's Blueberry Boy Bait is on the agenda for tomorrow. My oven's been broken since Thursday (tragedy!) but the electrician is coming this afternoon. Thank goodness - I feel very insecure without an oven!

I just ordered mine! This will be the first COTM I've participated in, and I am very excited. I've read her blog every so often for awhile now, and I have to admit it, I do love this type of comfort food. We'll see if my jeans still love me after a month of "The Homesick Texan"!

Looking for cupcake cookbook
I'm sorry - I don't want you to feel ignored! I make a lot of cupcakes, but I don't have a cupcake-specific cookbook. I usually just convert a regular cake recipe. I hope someone else on these boards has a recommendation for you!

Before, when they're still in little balls. You can just bake them straight from the freezer (maybe adding another five minutes). I nearly always have a bag of them stashed away.

Of course. This is wonderfully easy - you can always freeze them too. I've made them with many different combinations of cheeses and herbs. Gruyere and thyme was really good too.
Cheesy Poufs
Makes about 2 dozen poufs
1 ½ cups grated extra sharp cheddar cheese
¼ cup blue cheese, crumbled
1 ¼ cups all purpose flour
1 teaspoon cayenne pepper (or to taste)
½ cup melted butter
hot sauce to taste
Combine hot sauce with butter. Mix together cheeses, flour, and cayenne. Pour butter over mixture and combine well. Form into 1-inch balls, place 2 inches apart on a parchment-lined cookie sheet, and chill for one hour. Bake at 400 degrees for 15 - 20 minutes.

Today I made molasses cookies and cheesy poufs. Both were requests...from the same person! The cheesy poufs are a lot like cheese straws but in round form. I call them cheesy poufs because to be honest I couldn't think of anything else to call them, and it's stuck!
I can only imagine that my friend is anticipating a snacky dinner tonight. I dunno - could be worse...

I have, and in fact that is the lemon cake I usually make. This one turned out really well. It's not as dense as the pound cake version, and the lemon flavor seems more pronounced in the yogurt cake. Maybe because the lemon isn't competing with the butter? I don't know, but I recommend it, definitely.

Beef Stroganoff is on the menu for tonight. I know it's not exactly seasonal, but this is what I've had a craving for and darn it, I'm giving in. Also fresh Italian bread and a green salad with GretchenS' s creamy garlic dressing (which I am finally getting to try). Lemon yogurt cake with blueberry sauce for dessert. Should be a nice reward for working in the garden today!

I mentioned these on the WFD board, but I didn't want to say anything here until I actually made them (I wasn't sure I'd get to it) - peanut butter filled chocolate cupcakes with pretzel crust, ganache topping, and a caramel drizzle. I almost thought they'd be too much but they turned out really well. The salty-sweet worked really well, as did the combination of textures.

I will have to look that up and try it. I appreciate all kinds of dressings but when you get right down to it buttermilk will always be my favorite . At least I won't be buying it!
