New Orleans artisan spice shop? Looking for non-commercial blends. I am here this weekend only and was wondering if any locals or non for that matter know of any artisan spice shops? I've been up and down a few streets and most of what I see is mass-produced. Looking for some home-grown cajun, creolle blends. Unfortunately I'm only staying in the city this weekend without a car so any outer areas won't do. Please advice... Merci pour m'avoir aidé. |

I'll be taking part in an Iron Chef-style competition tomorrow. Any recommendations? The secret ingredient was ground beef. We won based on 4 criteria: originality, presentation, preparation techniques and taste. 1. Potato gratin 2. Stuffed conchiglioni The two dishes created by my sous-chef included: 4. Letttuce-wrapped meat balls Some general tips: - Choose the right companion - Be thematic and give yourself an edge - Be original - Be ready to throw out your ideas - Sharpen up your skills - Think pan sauce - Respect the serving vessel - Plan ahead - Get organized - Bring Gadgets - Always season and taste - Have fun Best of luck. |

I think the vessel or container will be important, ie: sliced daikon instead of a tortilla (which I'm bringing), baked parmesan crisps, belgian endive, etc. Any ideas? Thanks. |

Peruvian Saltado Recipes - with PHOTOS Oops, I forgot to add that our original 'saltado' recipe does not carry green onions and the red onions are not cut into wedges, but instead as strips to match the form and proportion of the fries. |

Peruvian Saltado Recipes - with PHOTOS Thanks for the recipe, but you forgot to include aji panca as the marinade and for stir frying the meats. Although a bit hard to find you could find panca, typically specialty spice stores carry it. Also, red vinegar is recommended for red meats and it does not require red peppers for saltado Limeño; however, it does add a nice taste. Served with lime wedges. |

Entertaining out-of-towners. Help me skip the duck tour... I’m entertaining friends this weekend and I was wondering if you had any must recommendations of must do’s while in Boston. This is my first time doing it (since I've only been here a while) so I could use any pointers, before jumping on the duck tour ;) They’re young, hip and dig all kinds of food. We’ll be checking out: This is kind of what I have for now. Perhaps we should check out Central, Porter or Somerville, but I don’t really know those areas well – unless you know of some hidden jewels. Your recommendations would rock the Kasbah! J. |
