Sourdough Bread Recipes

Hi, I was wondering if someone can help me out, I have made a sourdough starter but seem to be having a hard time finding bread recipes that it seems I could use it in. Am I able to adapt a recipe that I usually use so that I could use it with this starter? Or does anyone have a recipe for maybe like a country style loaf or a SF style sourdough bread? I have baked bread a fair amount but am still a little confused about how best to incorporate the starter into existing recipes, Can I just add a cup of starter to an existing recipe or do I need an entirely new one. Thanks for any help in advance.

Calf Brains in Bay Area

Hi, can anyone help me out, I'm trying to find calf brains, fresh or frozen, it doesnt seem like many supermarkets carry them anymore.. Preferably East Bay, SF, or South Bay. Thanks in advance.

Preserved Kumquats

Hi, we have a Kumquat tree that produces way more than we can ever eat. I have made Preserved lemons before by doing the standard cut into quarters, Add salt, and pack into a jar with more juice, leave out for a week shaking every day then putting into the refrigerator for a few weeks. My understanding is that the acid and the salt make botulism a non concern. Could I do the same thing with Kumquats, the acidity is high I believe. I was thinking of cuttting them in half almost all the way through, salting and packing them into a jar and adding lemon juice to top it off. Would this work to preserve them? Would they be safe to eat? Anyone done this before? thanks
