Looking for Desserts using silken tofu

I've had great success with vegan cheesecake using silken tofu and agar agar. I used to make them so often for an old boyfriend that I could just eyeballed everything, but I'll try to remember what I came up with:
* Pulse 1/2 bag Midel lemon snaps with a couple tablespoons Earth Balance
* Press mix into bottom o f springform pan and bake 5 minutes @ 350
* Blend 1 mori-nu firm pack with vanilla, sugar, and salt to taste (stingy with the sugar and liberal with the salt approximates a cream-cheese taste - I think I used Better Than Cream Cheese a couple times, but not necessary nor always considered vegan)
*bring 1/2 cup apple juice to boil and add 3 tbl agar agar stir at simmer until fully dissolved
* pour 1/2 of agar/juice mix into blender, blend, and pour immediately into springform
* blend remaining mixture with 1 cup berries (I liked frozen organic raspberries for a tart intense flavor)
* pour berries into springform on top of tofu layer and use a fork to "marbelize"
* let cool several hours until set

This began as an experiment, obviously open to tweaking...Flavoring the tofu with extracts, ginger snap or grapham cracker crusts, etc. But if you master the agar agar, it holds beautifully when removed from the springform, slices elegantly, and tastes incredible.

Favorite Ice cream, Sno Cone, or Gelato??

Personally, I'm really bummed that *both* locations of La Paleteria have apparently closed. A new one is open further north, according to their website...may have to go stock up:
Cajeta Membrillo, Mango Chile, Cantaloupe, Chamoy, Tamarind, Leche Quemada....
They truly made last summer endurable, whatever will I do?
NOT buy the paletas from El Chile, I'll tell you that much. Bad. Inedible bad.

WV beans and rice is 1.99!And all organic to boot...But even better, is the tempeh frito pie, for 3.75 or something. REALLY hits the spot on a budget!

Santa Fe: Adios Senor Lucky

Good riddance. At least the Palace had character, if not the best food...Senor Lucky's had neither, just a nauseating theme-park feel.
Sympaties to the staff though...

I'm with you fyfas! The Palace, that place had character if not the best food. Senor Lucky's had neither - just Disneyfied theme grub. Ech. Good riddance, though sympathy for the staff....

Santa Fe recommendations?

The Coyote Cafe is the most well-known restaraunt in Santa Fe, thanks to the fame of it's chef & founder Mark Miller. Unfortunately, the interior is rather dated and the whole atmosphere/menu seems a little cliche and bygone by about 25 years. For a lovely evening mojito, however, their rooftop Cantina is perfection, overlooking downtown Santa Fe. It also has a full menu.

Geronimo, Julians, and the Compound are all wonderful for a high-end experience, yet my most consistently outstanding meals and wine have been at the Santacafe.

Pasqual's has excellent, James Beard-awarded Mexican, but can be quite crowded so expect a wait. Brunch is my favorite, between the Huevos Motulenos and the Tamal Dulce.

When you tire of chile, Andiamo has outstanding service and the perfect romantic intimacy of an Italian trattoria in an old bungalow.

All of the restaraunts mentioned so far source from local farmers, as this is a well-worn signifier of status in the Santa Fe food scene thanks to Deborah Madison & her local influence. The Farmer's Market, on Tuesday and Saturday, won't compare to San Francisco, but it's excellent for such a small town.

For an alternative to the tourist institution The Shed, try it's sister restaraunt La Choza. It's much quieter, just a bit out of downtown. Same menu, same great New Mexican food. Tomasita's is another NM institution with an awesome green chile stew. Maria's has passable food, they really shine iwht the specialty margaritas (the owner wrote a book on tequila, mescal and agave; they must have hundreds of varieties).

Huevos Rancheros Christmas (red & green chile) breakfast at Tecolote is a must whenever I'm there. Besides great food, I love the hokey decor - all needlepoints, one room with a unicorn theme, the next with owls.

Felipe's Tacos is the best local taqueria and serves up speedy and very fresh (no lard here) lunch if you're out on St. Michaels. The taco cart on the corner of St. Francis and Cordova, behind what used to be Wild Oats (I don't know if it's WFoods now or just shut down) is the best lengua burrito you can find. Their vegetarian calabaza burrito is almost as good!
