Calorie-Dense Food: Ideas needed. Help!!

When my dad was going through radiation for throat cancer last year, he could hardly get any food down (and eventually went on a feeding tube for several months). But before and after the tube, my mom and sister and I tried to get any calorie-dense foods into his very sore mouth that we could.

We found that too much heavy cream and butter made him feel lethargic and sick, so we went for other fattening, nutrient-rich foods, like coconut milk.

We made "cream of broccoli" soup with coconut milk, and added coconut milk to his morning smoothies. (We sometimes added coconut oil, too, just for an extra punch of fat.) It's so delicious in curries, too.

I'll second what everyone else says about avocados and nuts, which also are so calorie-dense but not artery-clogging! If you get sick of eating them plain, there are some great recipes for "chocolate mousse" made with avocado, and almond cake is one of my favorite desserts.

Also, salads with nice oils in the dressings (avocado oil, pumpkin seed oil) and goat cheese can be calorie dense without being too heavy.

Have you used tahini much? Blending it with lemon and garlic makes a delicious tangy sauce for vegetables, or you can blend it with chickpeas for nice hummus.

Homemade popsicles and fudgesicles?

The weather is finally warming, and I'm ready to make some popsicles! When I was growing up, my mom blended yogurt and fruit and froze it into pops. Sometimes I just freeze cranberry juice or grapefruit juice, but those get icy.

Do you have any good recipes?

Fruity ones are great, but I'm also really interested in making fudgesicles and vanilla popsicles like some amazing ones I once had in Norway. Also interested in pops with alcohol!

I'll be staying in a condo near Poipu Beach and am wondering where we should go to get the best produce and seafood (doesn't have to be the same place). I've never been to Kauai, but my understanding is that there aren't a lot of grocery stores, especially in the Poipu area.

Is my best bet to load up at Costco when we first arrive? Is Papaya's Natural foods market good?

Do you eat dinner for breakfast?

So I realized recently that if I eat dinner for breakfast -- i.e. a piece of salmon, greens, quinoa is typical -- I'm much less hungry all morning than if I eat typical breakfast foods such as cereal, pancakes, etc.

It's the protein-fat-complex carb combo that makes me feel satisfied.

This got me researching what breakfasts are in other cultures -- In Japan, breakfast is Miso soup, in Indonesia, curries are typical, beans and eggs are common in some Latin American countries, open-faced sandwiches with cheese and meat are eaten in Scandinavian countries ... in other words, other cultures eat a lot of savory, protein-rich foods for breakfast.

I'm wondering:

What do you eat? Is there a specific reason?

If you live/lived/traveled to other countries, what were typical breakfast foods? Is there a theory behind eating curries for breakfast, for example? Does the spice wake you up for the day?

I guess I'm looking for both cultural and nutritional context ... so tell me what you know!

So I bought a big chunk of Scharffen berger 99% (unsweetened) chocolate. What should I make with it? I'm sure it's about 10 oz and most recipes I've found call for only a couple ounces. Is there any way I could make a mousse?

I guess I don't know really what I am looking for. To give you some insight into what I typically like, I am big into local, organic, artisan. I live in Seattle, so have access to wonderful produce and fairly good bread, artisan cheese, etc. I LOVE farmers' markets. Not a big meat eater. More likely to spend my calories (and money) on great chocolate or heirloom apples. I don't usually like pastries, but have been craving a buttery croissant for a long time. (It goes without saying, I suppose, that the croissant should be made with real, fabulous butter!)

You are probably the one to answer this, too: where to go for ice cream? I loved Grom the last time I had the hazelnut gelato there, and I'm reading Clotilde's Edible Adventures in Paris that lists a few places. it sounds like Bertillion is overly sweet? Do you like Pozzeto? Any other places?

French yogurt

I should clarifiy what I like. Here in the U.S., I eat plain whole milk organic yogurt from a family creamery (Straus), so I'm used to very good stuff! (I add fresh fruit myself.) I'm definitely not looking for yogurt similar to most in the U.S...i.e. with corn syrup, loads of sugar, and fake ingredients.

Next week, I am going to Paris for the first time with my elderly grandmother. We have rented an apartment in the 8th and will be looking for bakeries, markets, grocery stores, specialty stores...you name it...for the week we are there. I have done enough research to know which markets are which days, so we'll go to marche president wilson, raspail, etc...and we plan to schedule our days around various markets.

That said, I'm sure there will be times when we are near the apartment and we want to get a croissant in the morning, or yogurt, or a some grocery staple. Would you recommend Eric Kayser for the bakery? Is Laduree worth a trip?

(FYI...aside from markets, this is primarily a chocolate excursion for me, so places near all the chocolate superstars are also welcome!)

I'm not on any kind of diet (and I detest fake sweeteners, so no splenda!), but I would like to make one that doesn't have over a cup of sugar (both for the obvious caloric reason and for the fact that I don't like things that are extremely sweet.)
