I've had stellar meals at big ticket spots like Cafe Bouloud and L'Impero but don't go often enough to swear by their consistency. regular favorites are Gabreil's NYC and Il Grano in LA. Otto and Mozza too.
My most tattered cookbooks:
hand-me-downs like Clairborne/Franey's 60 Minute meals & Joy of Cooking are most tattered but these days I rely on Bittman's How To Cook Everything and the Cook's Bible which I love/hate
