I've been considering mail ordering from the wok shop, though it's been fun finding new chinese kitchen stores in the city. I'm going to try to drop by Mississauga's little chinatown plaza to find out if they have any, and if not I guess it's wokshop.com for me!

I dropped by Reliable on sunday and they only carry carbon steel woks. Some of the houseware shops in pacific mall carry some flat bottom cast iron woks but I hope to find a round bottom wok if possible.

Hi all,
Since I just got through a kitchen reno and got myself a Bluestar gas oven from Costco (great deal, that!) I've wanted to get into wok cooking.
After some research I had decided to go with a carbon steel wok; I've checked nikolau but they didn't have quite what I was looking for, and eventually I visited Tap Phong and found a 16" (!!) cantonese-style carbon steel wok for $18 that seems pretty good.
However now I realize I'd also like to try a traditional northern-style cast iron wok as well, maybe a 12-14" wok. Not an american-made, thick-walled wok but rather a chinese style, fragile, thin-walled cast iron wok with a handle and relatively steep walls.
Does anyone have any idea where I can find such a wok in the GTA?

Balsamic Vinegar recs?
Check out the Olive Pit on queen street just east of Trinity Bellwood park. They carry a wide range of balsamic vinegars and olive oils and are always willing to let you sample everything, even the 15 year old stuff!
It's just below The Spice Trader which is another fantastic store (all spices of course)

Hey everyone..
I hate to sound like a shill but I'm a pretty big tea fan and living in the BWV area I've bought alot of tea at Say Tea, despite the terrible service. Every time I go I feel like I'm bothering the crotchety old women who run the joint.
Ever since I discovered David's Tea on queen I've shifted my allegiance over to them due to their friendly and obliging service. I found out that they're supposedly opening this friday so I'm looking forward to checking their digs out (they're opening right between Bloor Meat Market and Max's Market IIRC)

IIRC active yeast has a thicker protective shell around the yeast and requires dissolving in liquid before use, whereas instant yeast can be mixed dry right into your dough due to its thinner shell

FWIW my friend used to partake in charcoal-lighting contests in college and the fastest way to get your charcoals burning is a small vial of liquid oxygen.
Failing that, you just need to move more oxygen to the charcoal. The way the chimney works (as i understand it) is it creates air movement as heat escapes through the top of the chimney and more oxygen is then drawn through the bottom; unfortunately hot air only rises at a certain speed, and you can do better if you have some way to provide more oxygen to the charcoal instead of the chimney.
He recommended some sort of fanning (I guess to functions like a bellows) to provide oxygen faster than a chimney will.

If you're really getting into bread baking I'd recommend actually cooking a loaf in your oven instead of in the bread maker.. the crust never comes out right on those machines in my experience.

St-Lawrence market has an extensive bulk-flour selection in the basement.. same guy who runs the dried beans/rice counter. You can get pretty much anything there.

So the butcher counter at Highland Farms at Matheson had some readi-cure which is sodium nitrite. I had to ask a few people until i got an actual butcher and not a counter person (who didn't know anything), but it was worth it.
I picked up a pig belly from St Lawrence Market (incidentally nobody there has curing salts) and I'm anxious to start my first attempt at pancetta!

Just an update, after talking to MANY pharmacists (most say their chemical supplier doesn't have any of this stuff so they couldn't order any even if I asked).. one of them told me to check out a pharmacist on bloor just west of Royal York on the south side.. they are a compounding pharmacy which means they mix many of their own drugs from scratch, so apparently they are likely to carry potassium nitrate / nitrite!
