How should Cotija be stored? It is so feta-like I feel like it will just dry up if not in some kind of liquid?

This is fantastic. I live across the street and have been waiting for it to open - I saw people outside on their "patio" today and was happy to see it was open. I will sample and report back. Thanks for the posts - I am stoked!!! With a sweet tooth like mine this could mean trouble.

Does anyone know where I can get some Cotija (feta-like Mexican hard cheese from cow's milk) in Toronto? I was at the St. Lawrence market last weekend and the cheese vendors had no idea what I was talking about.

Question for the bakers out there: what causes whitish spotting to occur on the chocolate on my chocolate dipped biscotti? I used baker's semi-sweet chocolate coarsely chopped (and mixed in some unsweetened chocolate as well) melted over simmering water. Any ideas?

This place is in my hood too. It is now open. I viewed their menu online and they have mainly meat dishes. Not too veggie friendly, but I may try their veggie chili or pasta sauces.
