Parsnips! parsnips add such nice sweetness to a mash.

Roasted vegetables always make me feel fall - even though eggplant isn't necessarily in season, I love Imam Bialydi

The veggie pot pie is a classic - I bet you could substitute out the heavy cream in this one:

and soups are always a great low-cal option

How can I duplicate Hellman's mayo?

It can be bland - I like my homemade mayo with a bit of mustard, and using really good olive oil. It doesn't have that light, sweet taste of Hellman's (which I'm pretty sure probably adds quite a bit of sugar), but is tangy and tasty on it's own:

Also, using really really good egg yolks makes a world of difference both in flavor and texture. For zing, paprika always does the trick.

Risotto with brown rice?

I've really enjoyed this baked brown rice risotto - both brown, and no stovetop stirring!

I also second melyna's barley risotto - it has such a wonderful texture, and is really tasty.

My roast potatoes stink!

My favorite advances for a normal oven-roast: using parchment paper lined sheets to keep them from sticking, and cutting open a whole bulb of garlic and roasting it on the sheet pan with the potatoes - the potatoes get all garlicky, and then you can scoop out the soft roasted cloves and toss with the finished spuds.

High heat also helps the crispyness - I started following these tips from cookthink:
