Storage for Silpats

I used to store mine rolled up, then I'd kick myself for not planning ahead like you do and let them lay out for a while to uncurl. Now I just do what MMRuth does, and store them flat in my sheet pans.

Silicone Pan Handle Cover/Holder

I bought a Le Creuset silicone sleeve to go with my (approx. 10") Le Creuset skillet. I still have to use a potholder with it. The area of the handle near where it joins to the pan still gets very hot, even through the sleeve. I am not strong enough I guess to hold a cast iron skillet full of food with my hand way out at the end of the handle. SIL noticed the same thing with hers.

They have it (Atlantis and Sirocco) on the shelves at SLT right next to all the other cookware. I always assumed it was in stock in the store, not something that had to be ordered.

I hate my LC grill pan!

If you haven't already, try coating it with a little oil before cooking. After cooking, once it's cooled down enough to handle, scrub it with a stiff bristle brush under hot, hot water to get off as much of that cooked on muck as you can. Then spray it with Dawn Power Dissolver (I know, I know, NOT what LC recomends, but at this point, what the heck!), let it sit for an hour, then do the hot water, scrub brush thing again. Works for me, hope it will for you, too.

Over the Range Microwave..recs?

renov8r, what you say about the otr units not controlling odors and grease is so true. I hate mine. If/when we remodel our kitchen, that will be the first thing to go. I will HAPPILY sacrifice the space savings that an otr unit offers, and install a proper range hood/ventilation system instead.

Do you Pre Rinse dishes for your Dish Washer? [Moved from Not About Food board]

Same here, mojoeater--we run our DW only once a week as well, so I rinse everything first. If something like egg yolk is left to sit on a plate for any length of time, it doesn't come off in the DW, even if I use the extra hot, heavy duty cycle.

You might want to check if you have a Le Creuset outlet in your area. I find that their merchandise is usually in far better condition than the ones I've seen at the discount stores (probably because they store them more carefully).

How Can I Keep Rolls Fresh?

I keep my bread, rolls, croissants, etc. in a Foodsaver bulk storage canister, at room temperature. I find that they stay fresh for at least a couple of days longer than they would in a plastic zip bag.

Foodsaver-crush free feature?

The only time I ever wish that my FoodSaver had crush free is when I'm freezing bakery items. You can freeze them first and then FoodSaver them, but they still get kind of squashed, imo. If you don't need to freeze your bakery items, then you can just put them in a canister and don't have to worry about crushing them.

another footnote: sometimes the coupons disallow certain items--including Wusthof and Henckels from time to time. I am a great saver of these coupons and some older ones disallow one brand, or the other, or both. You can try to use them anyway--worth a try.

the Henckels knives at Costco are their "value" or bargain knives. Their Premium lines (the one with the twin man icon, not at Costco) are the only Henckels worth considering, imo, but they cost more.

Food vacuum packing machines (eg Tilia foodsaver): do they work?

FS is not limited to frozen and refrigerated storage. Pretzels, potato chips, bread, breakfast cereal, bread crumbs, oatmeal, flour, dried fruit, etc. all are stored in FS canisters at room temp in my house. It is one of the most worth-it kitchen gadgets I've ever owned.

Another thing to ask yourself is how long do you want/expect your purchase to last. If you tire of things easily, don't spend the money on the good stuff. But if you appreciate quality and plan to hang onto these items, you might consider looking at them as investments as opposed to just kitchenware.

And as far as the coupons not being good for Wusthof or Henckels is concerned, check them first. I think it depends on the age of the coupon. Like jfood's mom, I have been stockpiling coupons for a while, and the coupon here in front of me that "expired" 10/15/02 excludes Henckels, but the one expiring on 08/27/07 excludes Wusthof. 04/23/07 expiration excludes BOTH. I wish someone would explain that to me, too.

picking out the offfensive food doesn't always work. Depending on what it is, and especially if it is cooked into a dish, its flavor can be left behind to ruin everything.

GreenPan Thermolon cookware -- any experience with this?

$99 for a set, wow, just one good quality 12" nonstick costs more than that, usually. It will be interesting to see if big mfrs. switch to Thermolon nonstick coating instead of what they use currently. D'ya think if they do their prices will go down (lol!)?
