Whatever Happened to Scungili (aka Whelks)?

Wow, reading this thread has enlightened me! I grew up on Staten Island and when my family went to an Italian restaurant (Rocky's if you are as old as me and remember :) I would always order scungilli. After I left the Island, I never saw it again. The enlightenment part is for 45 years, I have thought that scungilli was squid - ha ha ha! Never too old to learn something! (keep in mind, I ate it from ages maybe 7-18, way before I had any idea about being a chowhound!)

Buckwheat Troubles

I concur with paulj, i always whisk up an egg, mix the raw buckwheat in it in a hot frying pan, then cook. This was taught to me by my Russian Mother in law and has always worked. I have not used Bob's buckwheat though, so it might not work with his.

Spending Thanksgiving alone.

Marymac you are not the only one alone. First time in my life I am completely alone today also. It would be too much of a pity party to tell you the reasons why but I am. I wish you to not be lonely. I am hoping my son and his GF will be here by Saturday and even if we can't find a turkey, we will be together! I have the makings for side dishes just no turkey, I hope there will be a fresh one that they can buy on Saturday so we can make it before they leave on Sunday. Virtual hug to you from me.

Mine is the combination of apples and onions, that you make with pork. Over 20 years ago, I was making pork and decided to make the side of apples cut up with fried onions. It smelled so good, tasted so good, I ate all of it! To this day, I can't stomach the thought of that combo!

And like others with a misspent youth, just the thought of Boone's Farm wine, makes me want to hurl!

Cooking frozen pelmeni

You boil them in salted water in which you also put a dried bay leaf. Boil for a few mins, till they float. Drain them, put them in a bowl, mix with butter, put a dollop of sour cream on top. If you have them left over, (why i would not know) but anyway, fry them in butter till golden brown and crispy. Nyam nyam! (nice you got them on International Women's Day which is a big holiday in Russia) Another must is a shot of vodka with them. (preferably Russian Standart)

Cooking with one hand...

Trial and error is your best friend. My son is a congenital amputee (no left hand at all) and he is the main cook for his family. He opens jars, he chops and peels, he does it all with no adaptive equipment. Of course, since it is your dominant hand that is affected, it will not be as easy for you, but you can do it. The one thing I would ask for help with is peeling veggies or I would resort to frozen ones at this point because of danger of cutting yourself since it is new to you. You can take an old wooden cutting board and put a nail thru it, to hold your veggies if you don't want to buy adaptive equipment at this point. Good luck! Humans are incredibly adaptive.

Christmas Dinner

Yes but....this year was a different one, as due to death and my divorce, there were only myself, my son and his girlfriend. Dinner was great, I gave them a choice between pork, beef and Italian. They chose beef. Prior to this year, it meant Prime rib, but this year, due to the aforementioned reasons, times are tight. But the Saturday before Christmas my good friend called me and told me a local store had Prime Rib on sale for 3.99/lb. So I got a 2 rib roast and was able to surprise my family! They also wanted a salad called Olivier (a Russian potato salad) and our usual roasted Brussell sprouts. Nice calm dinner, ate our fill, talked, relaxed. So yes, it was nice even though I was completely anxious over life changes.

The absolute best Thai within your criteria, is Zab Thai, on Hwy 99 and 112th St. Sw. Great food, great wait staff, nice decorations, and even a piano player who plays on some nights. I have had so many dishes, its difficult to tell what is best but try it and let us know what your thoughts are.
Mexican I like El Paraiso on Colby Ave in downtown Everett. Homemade tortillas, good Mexican American.
Another Everett recommendation is Marimba on Hewitt by Rucker. They advertise as South American- Carribean, and have great food, inconsistent waitstaff. They can be slow but it is worth the wait. We feel as if it is a restaurant that could be in Seattle ;) and we have it here in little Everett.
Edam cheese, you can get at any Trader Joes.

Has anyone eaten at Marimba in Everett?South American cuisine. Four of us went for lunch, at 1pm, and we were the only ones there. Food was great! Atmosphere is great, nice decoration, nice brick walls, One of us had lechon sandwich, one had Chicken Adobo, two had chicken breast sandwiches. Came with tostones.

Really enjoyed the place BUT even though we were the only ones there, and did not order anything special, all regular menu items, it took them over 40 minutes to bring us our food! We were there at lunch hour, not dinner, and actually only on a 60 minute lunch from work. So needless to say we wolfed down our food, and ran back to work. So I would say go try the restaurant but be sure to have time for a leisurely lunch!

I made blini of course. Grew up eating pancakes for Mardi Gras, married a Russian and now make blini! Ate mine with sour cream and orange marmalade, while hubby ate his with ikra (caviar). Yummmy

Woodfire Grill is horrible! We went one time with a relative visiting from another country and luckily our relative did not speak English so he did not know completely, how horrible the service was! The bartender was the waiter, to start off with, my husband asked him what beer was on tap, he said, he couldn't tell him, for my husband just to tell him what he liked nd he would say if they had it or not!! It went downhill from there, including giving us a menu that was old so the things we chose from it, didn't exist as choices anymore!! Another time, our office had made reservations for a group of us to have lunch there, 8 of us. Even with reservations and the prior knowledge of a time limit, the table was not ready for us. They fixed the table, and literally, all the glassware was dirty and some of the silverware. We told them we needed clean items, so they decide to move us to another table!!! After waiting while they prepared that for us, using up even more of our time, we then quickly ordered and they brought all of our lunches at different times!!!! NEVER AGAIN!

I simply can't agree that Collector's Choice has good food. I have never had anything that was any better than a Denny's there! I do like Fred's Riverside Alehouse.
If you do go to Everett, there is now a place on Colby called "The Irishmen" that is a welcome choice!

Is it still Beef Stroganoff

My native Russian family makes beef stroganoff like this: saute sliced onions, mushrooms if you like but are optional, then saute thinly sliced round steak, add all together, season with salt and pepper and then squirt some ketchup in, mix all well. Add sour cream (Russian sour cream is more liquidy than American) and mix well, do not boil it just warm it. Serve with fried potatoes. Yummy! (No one realizes it is ketchup that is adding such a nice flavor).

Are there nice b-day cakes to send by mail?

Oh, i have had ups and downs over the years of doing this. We live on the West Coast and my unmarried fireman brother lives on the East Coast. So each year, even prior to internet, my mom and I would find somewhere to send a cake to him. We have had good times and bad. This year the cake was totally smashed, and the company refunded the money. My advice would be to definitely find a company who contracts with local bakeries, rather than mails the cake.

carrots: sauces, dips, recipes? strange sauce or dip for veggies?

I make what is called "Korean Carrots" by my Russian family.
Basically, you shred carrots or buy the shredded ones (I buy those when i am preparing this for a party). Chop up lots of fresh cilantro, add some cumin seeds, some red pepper or cayenne, add to carrots in large bowl. Meanwhile, in a frying pan, slowly fry some chopped onions in a lot of oil, fry at low temp until the onions are browned. While this is frying, chop up tons of fresh garlic, place this on top of the carrots and pour the oil on top of it, leaving browned onions in frying pan. Mix all this together and add salt and some sugar or honey and small taste of vinegar.
Let it all marinate and YUMMMMMM YUMMMM this is good! (as you can tell, I kind of wing it, but this is my take on this delicious salad)

Noisy Restaurants: A painful experiance

I can relate, because my husband just hates loud restaurants, and that is one of the biggest criteria in selecting where to eat. Even if he loved it, he won't go back if it is too noisy. There are many that are way too loud.

Girl's Night Out with a catch

Ok, not a catch just a challenge? We are adventuresome eaters, liking to try new places when we go out for dinner once a month. We always check here at Chowhound for our place to go. We usually would go somewhere in the Eastside, but Seattle is ok too. The challenge is that we now have someone who keeps Kosher. As the rest of us don't, we wanted be sure we pick a place that our friend can enjoy also. We don't think she is extremely strict about it, but we are unsure of places to choose from. Anyone with ANY advice, please help us.
I know that some of you are thinking "why don't they just ask their friend?" Well, we don't because it usually falls on one of us to choose the place to go, she always just says, for us to choose.

Bacon Challenge - need help from bacon afficionados!

I like the bacon from Amana meats in Iowa. Great taste for me.
